Are mug cakes as good as straight-out-of-the-oven, freshly baked cakes? Absolutely not. Sorry, mug cakes have nothing on a soft and pillowy piece of cake. BUT, who in their right mind has the time, the energy or the ingredients to spontaneously whip up a cake when they suddenly start craving one for dessert. The answer is no one…and Beyonce, because there’s nothing she can’t do.

This peanut butter chocolate mug cake has got me thinking about time and how precious it truly is. I’m not gonna get all YOLO on you, but it’s worth taking a second every now and then to reassess how you are and want to be spending your time.

I’m fortunate in that my job affords me the ability to mould my time to those wants and needs. I want to spend my time building my career and working hard, but I also want to ensure that I get to enjoy time with my friends and family, outside of the digital world.

I very much have a work hard-play hard mentality and I do this so that I can have my full attention with the people I want to be spending my time with. In the past I’ve been more easily distracted and tried to balance work and play each day but I’m finding that just doesn’t work for me.

When I’m in the zone, I’m in the zone. I can cook like 12 recipes in a day (an exaggeration but you know what I mean…), batch edit all of the pictures and schedule social media for dayssss. And then when I’m out of the zone, I am very much out of the zone

I think it’s funny when people ask me how I balance running two sites and their social accounts. From other people’s perspectives I can see how I must seem like a digital addict. I am and I’m not. Do I spend way too much time on social media? Absolutely. But 99% of the content you may be seeing from me is scheduled so it’s a very real possibility that I’m  watching House of Cards with C  or you know, travelling around Europe and not actually online.

But sometimes you just have to schedule things and bake your cakes in the microwave. It opens up time to do all of those other things you want to do and see all of the people you want to see. And if the downside is a gooey peanut butter center in a delicious 5 minute cake? I’ll take it.

Instructions

  1. In a small bowl combine flours, cocoa powder, baking powder and coconut palm sugar.
  2. In a separate bowl combine egg white, mashed banana and almond milk.
  3. Add wet ingredients to dry and stir to combine.
  4. Stir in chocolate chips.
  5. Spray a mug with coconut oil or nonstick spray or grease with coconut oil.
  6. Scoop half of mixture into mug and flatten with back of spoon.
  7. Place a scoop of peanut butter in the center and flatten slightly.
  8. Top with other half of batter and flatten top and sides.
  9. Place in microwave and cook on high for 1 minute and 10 seconds*
  10. Serve immediately as is or topped with greek yogurt, additional peanut butter or toppings of choice.

*times may vary slightly depending on microwave but check after 1 minute if it needs longer

  1. Must try this!! I love chocolate AND peanut butter. I agree that mug cakes are not the same as real cake, but they certainly hit the spot when I want a sweet treat!

  2. I am a huge fan of a good mug cake, ESPECIALLY if it involves peanut butter. I do spend a good deal of time blogging/reading blogs/on social media, but there are always times for those things and times for living life. I think college has forced me to live life a little more than I was used to when I could blog every day over the summer, but that’s not a bad thing at all. And sometimes I just want to lay in bed and binge-watch Jamie Oliver’s videos on Youtube.

  3. I love you…..creepy? Sorta? Well you have made a healthy mug cake with NO EGG! Being allergic to egg has really threw a wrench in my protein snacks 🙁 But no longer! I can’t wait to try this 🙂

  4. I feel the exact same way as you do about mug cakes. but when you are craving something sweet and that is healthier it will work. I would definitely make this for breakfast!

  5. Only you could turn a post about mug cakes in a serious comteplation of how we prioritize and spend our daily lives.That’s what keeps me coming back even when you’re talking about chicken. Though mug cakes are obviously better. I don’t make them on the regular but they’re perfect for my still-single girl status. And peanut butter and chocolate? You know you nailed it there.

  6. I have never made a mug cake before. In fact, I will happily spend hours making an entire cake from scratch and going all out with double or triple layers and fantastic frosting on each and every layer. I do this once or maybe twice a year though because it can be so time consuming. Also because I eat the entire cake, save a piece for the Hubby. Little cake piggy.

    If I were to ever eat a mug cake, this would be it.

  7. I gotta use your scheduling ninja powers because I definitely struggle with unplugging outside of work and outside of blog (both of which revolve around social media and screens) I know I’ll get there but it’s a concerted effort for sure.

    I love mug cakes but you’re right, they’re not the real thing. I went through a phase in my *ahem* not so healthy eating phase in my second year of uni when I would make gluten filled mug cakes and add in a chocolate truffle or two… It was ridiculously good I must say, although my priorities have changed rather 😉
