Plus they're gluten-free!If these cookies aren’t a tip off that St. Patrick’s Day is right around the corner, then you are either not as big a fan of St. Paddy’s Day as I am, or your eyes have frozen shut in this arctic tundra weather.

I feel pretty strongly that green food ought to be eaten all day every day, but for obvious reasons I am sharing these today. They’ve also got me reminiscing on past St. Paddy’s Day debaucheries…

From infamous green beer food poisoning with Eseids (it totally wasn’t the green beer but drinking it certainly didn’t help) to passing out well before 6:00 PM every year, St. Paddy’s Day has yet to disappoint.

I love any holiday where it’s acceptable to day drink and be in bed at a reasonable hour. I also love coming up with natural ways to colour food, so basically St. Paddy’s Day is my jam. Green pancakes anyone?

I strongly suspect that this year will be no different. Considering I will be celebrating in the heartland of St. Patrick, this is just about guaranteed.

When the fantastic four are together, it is always an epic time but when you throw in the whole throngs of people drinking on the streets of Ireland I’m gonna guess that this trip is going to be one for the memory books.

These Matcha Green Tea Chocolate Chip Cookies were made in prep for the trip. I needed to get my green cookies down so I could pack a suitcase full of them for Sab and Sam, and I wanted to make sure that matcha in cookies tastes as awesome as they sound. FTR, they do.

Sab loves her green tea ice cream and chocolate is her faveeeee so these were made entirely for her! I’ll keep you guys posted on how they go over, if I make it out alive…

Matcha Green Tea Chocolate Chip Cookies

Ingredients

Instructions

  1. In a large bowl combine oat flour, baking soda, sea salt and coconut sugar.
  2. In a separate bowl combine coconut oil, applesauce, egg and vanilla.
  3. Slowly add the wet ingredients to the dry.
  4. Stir in matcha powder.
  5. Stir in chocolate chips.
  6. Cover bowl with plastic wrap and place in fridge for 1 hour.
  7. Preheat oven to 375 degrees F.
  8. Scoop out balls and flatten onto a parchment or silicone-lined baking sheet.
  9. Place 1 tray into the oven and bake for 10 minutes.
  10. Remove from oven and let cool on tray for 5 minutes.
  11. Place on a wire rack to cool completely.
  12. Repeat until all batter has been used.
  13. Store in an airtight container for up to 5 days.

    I’m excited to be in Boston this year for St. Patty’s day but I’m sure Dublin will be amazing. I traveled there briefly whilst abroad and loved it even though it was awful awful weather so I guess that says something! Have a hard cider for me <3 (if that's your thing)

  2. These look awesome!! I’ve been thinking that I want to come up with a Paddy’s Day recipe with matcha . . . You’ll love Dublin – just soak it all in:) And then go to Gallway for a couple days if you can!! Couple hours away and a nice change in pace from Dublin.

  3. Green beer food poisoning?! Oh my, what a St. Paddy’s Day experience. I’d be hardpressed to drink another green beer in my life if that happened, and stick to all the matcha cookies! I have yet to bake with matcha and really need to action that plan soon! Love these healthful cookies and can’t wait to try em!

  4. I would say an IV might be a good idea for surviving St Paddy’s Day. I don’t know about Ireland but I know in the US my med-school friends wouldn’t ever give me an IV after a long night of drinking.

    Also this is the first year in 3 year I haven’t had to listen to people argue via social media on St Pattys vs St Paddys.

  7. St. Patty’s Day in Dublin? Now that sounds fun! I always enjoyed celebrating in university, but since finishing I haven’t been able to celebrate it. And this year it falls during the week that I’m training for my new job, so I’ll probably be lame and skip it this year too.

    Maybe I’ll celebrate with this cookies though. I’m posting a matcha recipe this month too, so I have some leftover matcha powder to make these with.
