Cornbread just got an upgrade with this vegan and gluten-free pumpkin cornbread recipe. Made with simple and wholesome ingredients the whole family will love, you’ll never go back to regular cornbread after trying this recipe!

My name is Davida and I am addicted to cornbread. Besides the obvious recipe testing, a recipe needs to be mind-blowingly good for me to make it twice. I’m going on 3 with this one. And it’s healthy, which makes me feel awesome when I slather it with honey or cheese.

Yes, you heard me correctly, I said cheese. Cornbread Grilled Cheese in fact. I wish I could take credit for this one because it really is genius but props go to the guys at Comida Del Pueblo who managed to give me a full on mouthgasm with their cornbread grilled cheese number at The Toronto Underground Market last year. They one uped me with guac and sour cream but you better bet that will be happening I have no idea why but I don’t think I tried cornbread until a few years ago. It just isn’t a Canadian thing I guess? But since discovering I actually have a weakness for all things cornbread I’ve uncovered a whole new world of cornbread eats. The most winning combination by far is the cornbread grilled cheese. And please people, let’s not skimp on the cheese here. Some 5 year aged cheddar on this bad boy.

But I’ve also been starting my days with this pumpkin cornbread and all the toppings! More of a classic with a Maven twist, I’ve been loving this gluten-free cornbread coated with walnut butter and honey. Other recent winning combinations include cornbread and cottage cheese, cornbread with peanut butter and apples and the always delicious cornbread and chili. At this point it’s basically a food group for me. I’m thinking big things like “cornbread week” and potentially hosting a cornbread eating contest out of my kitchen. Who’s with me? In the meantime make this pumpkin cornbread recipe, you won’t regret it!

Pumpkin Cornbread {Gluten-Free & Vegan}

  • Author: Davida Lederle
  • Prep Time: 10 minutes
  • Cook Time: 45 minutes
  • Total Time: 55 minutes
  • Yield: 12 slices 1x


  • 2 flax eggs (2 tbsp ground flax mixed with 6 tbsp water)
  • 1 cup brown rice flour
  • 1 cup yellow cornmeal
  • 1 tbsp baking powder
  • 1/2 tsp sea salt
  • 1/2 cup coconut palm sugar
  • 1 cup pumpkin puree (applesauce and mashed banana also work)
  • 1/2 cup unsweetened almond milk


  1. Preheat oven to 350 degrees F.
  2. Grease an 8 x 4 loaf pan with non-stick spray or coconut oil.
  3. Make flax eggs and set aside for at least 10 minutes.
  4. Combine cornmeal, brown rice flour, coconut palm sugar, baking powder and salt in a large bowl.
  5. In a separate bowl combine pumpkin, almond milk and flax egg.
  6. Slowly incorporate wet mixture into dry.
  7. Add mixture to loaf pan and bake for 40-45 mins.
  8. Let cool for at least 20 mins in pan before removing and letting cool completely on a wire rack.
  9. Store in an airtight container for 3-5 days.

    Moral of this post: Cornbread is pretty much the most versatile food out there! I’ve never made some but you are making me want to rectify asap.     We never had corn bread growing up… I can’t recall one time when we had it. My first experience with it was a few years ago and I loved it! This recipe looks amazing, can’t wait to give it a try!

    I love cornbread. I hardly ever have it though because when I think of cornbread, I think of the Jiffy muffin mix box. That’s how we do it in the south – inhale cornbread mix from the box because we’re too lazy to make it ourselves. But your recipe doesn’t look too complicated, so you are tempting me to try making it from scratch!

    Confession: I’ve never had cornbread. It definitely must be a Canadian thing, because it’s not something that really ever comes to mind. In fact, I only -just- tried polenta for the first time a couple years back, and that was thanks to seeing it around the blog world. This bread looks delicious, though, so you may have just convinced me to give it a try.

    I got that cornbread grilled cheese from Comida Del Pueblo too and holy moly was it ever good! I don’t know why I never thought to recreate it. I love the idea of doing a grilled cheese with this pumpkin cornbread – yum!

    First of all: AHHHHHHHHHH!!!!!!! #BBM2014 is in full swing! I’m so effing excited you were down with that idea. When we started discussing, I was like ummmmm DAVIDA TOO PLEASE. I mean, duh. You need to get on gchat immediately. All the cool BBM2014ers are doing it. I was really jealous of your convo with Meghan the other day since I don’t have an iPhone and can’t text you. Sad. Anyway, yeah girl, cornbread is definitely a southern thing, although I’ve never liked the stuff. I’ve only had cornbread that I liked one time. But yours looks effing scrumptious and you have to make it for me and that bitch above me. Cheese on it??? Holy fuck, yes to all of that.     I love cornbread! I made a pumpkin cornbread awhile back and really liked the addition of the pumpkin. My boyfriends grandma makes the best corn bread, it’s like a cross between corn bread and spoon bread. I like how this recipe is gluten free and vegan.

      All purpose! or whole wheat. In terms of gluten-free oat flour might work? Buckwheat will probably make it too heavy but you can try!

    YUM! That looks amazing, Davida and especially good with savoury OR sweet toppings..or both? Cheese, pickles and peanut butter would work! If brown rice flour isn’t available do you reckon oat or wholemeal might work? Need to hunt down corn meal now!

      Not sure about oat flour but wholegrain flour should work just find and if you use that you can omit the xanthan gum, because the gluten in the wholegrain flour will act as a glue instead!

    I LOVE cornbread but I can’t seem to get into it if it’s not Thanksgiving! I’m not sure what that’s about….I guess because that’s the only time anyone in my family ever made it when I was younger. However, I think I would eat that cornbread grilled cheese in the middle of July in Tucson, outside, if it was presented to me! Looks fantastic. And yes, I WOULD love that walnut butter recipe, please and thank you πŸ™‚

      Cornbread year round is all the rage! Get on it girl πŸ˜‰

      Here’s the recipe: 2 cups of walnuts roasted in the oven at 350 degrees for 8 minutes. Put in food processor and process for about 10 minutes or until butter consistency is reached (scrap down sides as needed). Add in half a teaspoon of sea salt and a 1/4 tsp of cinnamon and nutmeg. That’s it!

    This may be a very dumb question but is Cornmeal the same as Polenta?

    Be still my heart…Also, you just solved a major snafu (is that even how you spell that bahah?) in my last cornbread making endeavor. I made cornbread muffins at Christmas last year and could not for the life o me figure out why they were so dense and crumbly…I only used cornmeal, no other flour. Oops…

    Mmmmm! I thought I’d already commented on this one but I guess not. I do believe I have all of the ingredients for this. Except the rice flour. But I do have coconut flour and all purpose. I’m thinking the coconut might mess up the flavor. Of course, I have bread flour too. Okay. I just need to make this.

      All purpose will definitely work! Coconut flour will be a bit of a challenge though with no eggs. You can omit the xathan gum up if use all-purpose because the gluten in the flour will act at the glue instead!

    I love cornbread, especially with jalapenos (if you like the spicy parts!), and they are soooo good with Earth Balance (soy-free) butter. Oh my, what an impressive idea! Cornbread Grilled Cheeze with guacamole & sour cream?! I would love to try this out!!! I’ve tried Bobs Red Mill gluten-free cornbread mix (it was pretty good), but I would love to make my own version..but I like the idea of “grilled cheeze” cornbread with guacamole n all.     I love to eat a cornbread recipe from a local vegan restaurant that is made with brown rice and cornmeal. It is sooo delicious topped with fresh carrot spread or hummus. Your pumpkin cornmeal recipe looks amazing. Glad I found your post at Gluten Free Fridays.

    Don’t knock the fries slathered in gravy. That was always one of my favorite eats in Canada, although I wouldn’t turn down your cornbread or the recipe for walnut butter. You are 100% right: never skimp on the cheese.

    I can vouch for this recipe after making it with some chili this past week: DELICIOUS, not gummy at all, and perfect with soup or salad or plain with some mashed avocado and salt on top. While the pumpkin flavor didn’t come through (as expected), and the texture wasn’t my favorite until I let it cool completely, I ended up devouring the whole loaf with friends as its texture improved as it got room temp and the crust stayed nice and crusty (?).

    I love that I can remake this recipe with applesauce the rest of the year! Thanks Davida for pushing me to try VEGAN and GLUTEN FREE bread – something I never thought could work in my kitchen πŸ™‚

      Aw thank you so much! Definitely a new way to make cornbread but considering it’s pretty much as healthy as cornbread gets, it’s pretty darn good πŸ˜‰

      regular milk would be fine or coconut milk if you’re dairy-free!

    Do you think it would affect the recipe if I left out the sugar? I’m on Yeast free restriction so sugar or anything sweet is a no-no.
