Grilled Shrimp Tacos

Enjoy a Mexican-themed dinner with these Spicy Grilled Shrimp Tacos with all the fixins. Perfect for a weeknight dinner or a dinner party. No one will believe you that they’re healthy too!

I feel like I go in phases of making super quick and easy meals and then time intensive recipes with countless ingredients. I’ve been realizing lately that maybe a little more balance would be nice. I feel like I’m flip flopping between being super inspired in the kitchen to being totally burnt out. SO this recipe was created for the middle ground I’m striving for. 

Nothing is particularly complicated or difficult about this recipe, it just has a lot of toppings! I promise each and every part of this recipe is worth it. Trust me.

Here’s What You Need for the Spicy Shrimp:

  • Raw shrimp – yep, you’ll want raw shrimp so you can marinate it and cook it in all of these yummy spices.
  • Olive oil
  • Lime juice
  • Garlic clove
  • Spices – chili powder, paprika, cumin, cayenne pepper, dried oregano, salt and pepper.

How to Make Shrimp Tacos

Because there are a lot of parts to this recipe, I recommend following these steps.

1. Get your shrimp marinating. Mix all of the ingredients together for the spicy shrimp and let marinate in the refrigerator for 20 minutes.

2. After you get your shrimp marinating, mix up the slaw. Mix all of the slaw ingredients in a bowl and place in the refrigerator to allow the flavors to combine. 

3. While your shrimp and slaw are sitting in the fridge, you’ll have a little time to get the guacamole and pico de gallo made. 

4. When all of your sides are made you’ll cook the shrimp and then assemble the tacos.

Spicy Grilled Shrimp Tacos

Ingredients

For the Spicy Grilled Shrimp:

  • 1 lb raw, organic shrimp
  • 1 tsp olive oil
  • juice, 1 lime
  • 1 garlic clove, minced
  • 1 tsp chili powder
  • 1/4 tsp paprika
  • 1/4 tsp cumin
  • 1/8 tsp cayenne pepper (adjust depending on spice tolerance)
  • 1/2 tsp dried oregano
  • salt and pepper, to taste

For the Simple Slaw:

  • 2 cups of coleslaw
  • 1/2 medium red onion (about 1/2 cup), thinly sliced
  • 1 tsp olive oil
  • 1 tsp honey
  • juice, 1 lime
  • salt and pepper, to taste

For the Guacamole:

  • 1 avocado (from mexico!)
  • 1/2 medium red onion, finely chopped
  • 1 garlic clove, minced
  • 1/2 jalapeno, seeded and chopped
  • 1 lime, zest and juice
  • 1/4 tsp cumin
  • salt and pepper, to taste

For the Pico de Gallo:

Instructions

For the Spicy Grilled Shrimp:

  1. Place shrimp in a bowl and top with all ingredients.
  2. Let marinate for at least 1 hour (longer is even better!).
  3. Once marinated, heat up grill or grill pan to high heat.
  4. If using a grill pan, spray with olive oil. If using a bbq grill, place a piece of tinfoil down and spray that with olive oil.
  5. Add shrimp and cook for 2 minutes on each side.
  6. Remove tails before serving.

For the Simple Slaw:

  1. Place coleslaw in a medium bowl and add onion.
  2. Top with olive oil, honey, lime juice and salt and pepper.
  3. Let marinate for at least one hour.

For the Guacamole:

  1. Mash up the avocado in a medium bowl.
  2. Add in chopped onion, garlic and jalapeno.
  3. Top with lime juice and zest, cumin and salt and pepper.

Assembling the Tacos:

  1. Heat up each tortilla in the microwave for 15-20 seconds (or in the oven or stove top).
  2. Top with 3-4 pieces of shrimp, a scoop of pico de gallo, a scoop of guacamole and top with a small handful of simple slaw.
  3. Feel free to add hot sauce for an additional kick.
  4. Dig in!

Note: You can cook your shrimp on the stovetop if you prefer.

    All I have to say is I think you are going to be the next big thang on Youtube and that life would not be life without avocados. I made a superfood bowl and had a mini meltdown that I didn’t ave any avos left….till I looked in my secret hiding spot, the fridge, and found one. #winningatlife

    Okay tacos are my life. FOR REALS! Whenever I go out to eat shrimp tacos are ordered 90% of the time so this post literally made me swoon. Oh and I am so with you on the avocado + eggs thing. You know breakfast tacos are my jam. And that avocado food tour truck…OHMYGOSH I need to move to Canada asap!

    Catching a cheating partner is very difficult because they have the
    advantage. A truck is used day in and day out – no rest for the
    weary. Parents with special needs children,children with autism for example,or other special needs kids
    would benefit greatly with a tracking device designed especially
    for children.

    It’s my favorite taco, whenever I visit a Mexican restaurant, I ask for a shrimp taco. It’s an explosion of flavors in the mouth. With this recipe I will prepare them at home. Thank you very much for sharing.
