We have pizza on a constant repeat for our weekly meal plans. It’s a hit with everyone in my family and easy to whip up…for the most part. While I love a fresh homemade pizza crust, that isn’t always going to happen on a casual weeknight. Cue: Tortilla pizza!
Tortilla pizza is the answer to all your pizza night problems. You simply ditch the pizza dough in favor of a store-bought tortilla and then add your favorite toppings. What you end up with is a perfectly crispy, personal pizza that you and your whole family will be obsessed with. It’s faster and easier than ordering out!
Ingredients in Tortilla Pizza
- Large tortillas – make sure you buy the large variety. Usually about 10 inches or sold as “burrito-sized” or “gordita style”. Use a gluten-free tortilla or low carb tortillas if desired but you will need to adjust baking time as they tend to burn more easily.
- Sauce – you can go with a classic pizza sauce like marinara sauce or get creative and use something different like enchilada sauce or pesto.
- Cheese – I like to use mozzarella cheese but you can use whatever cheese you prefer or a blend of cheeses (parmesan cheese, cheddar cheese or even ricotta are all great)
- Toppings – see topping suggestions below but the sky is truly the limit! Veggies or meat (pepperoni, ham, sausage etc…) are all great ideas.
How to Make Tortilla Pizza
STEP 1: DRESS PIZZA
Place your large tortilla on a baking sheet and top with sauce, spreading it around evenly. Leave a small perimeter around the tortilla to act as the crust. Sprinkle with cheese and desired toppings.
STEP 2: BAKE + SLICE
Place in oven to bake for 5-10 minutes or until lightly browned and cheese is bubbling. Let pizza cool for a few minutes before you slice and serve.
Topping Ideas + Variations
Classic margarita – just your classic tomato sauce, cheese and a little fresh basil.
Veggie – add a few tablespoons of fresh tomatoes, red onions and red or green peppers. Olives are great too if you like them.
Meat-lovers – add about a 1/4 cup of meat like pepperoni, cooked sausage or ground beef.
Pesto – sub store-bought or homemade pesto in place of pizza sauce. Top with desired cheese.
Mexican-style – use enchilada sauce in place of pizza sauce. Top with a mexican blend cheese and desired toppings.
BBQ-style – use BBQ sauce in place of pizza sauce.
Buffalo-style – use buffalo sauce in place of pizza sauce and top with blue cheese crumbles.
FAQs
Absolutely! This recipe can easily be doubled, tripled or made for however many mouths you’d like to feed.
Yes, you can definitely make these in the toaster oven. Just follow the instructions as is and cook in your toaster oven. Note, you may need to slice in half and bake each half individually or on different racks.
Yup. You’ll add your fully prepped tortilla pizza to your air fryer basket and set for 6-8 minutes. You can also reheat leftovers in the air fryer for 1-2 minutes.
I personally would not recommend it. You could assemble everything a few hours in advance and store in the fridge before baking.
You could, but again I don’t recommend it. If you’d like to freeze this recipe you can assemble and then wrap your pizzas in plastic wrap and then tinfoil. Place in the oven when ready to cook and bake for 10-15 minutes.
Place slices of pizza in an airtight container and store in the fridge for 1-2 days. Reheat on stove-top in oven or in air-fryer (see instructions above).
