Chocolate Chip Gingerbread Energy Balls

You didn’t think you were gonna get through the holiday season without an energy ball recipe, did you? You’re probably expecting me to pump this whole post full of ball jokes too. But nooooo, today I’m channeling my mature 25 year old self. If you’re looking for a super punny ball post, I’ll refer you here.

I’m right smack in the middle of my 20s and as a result life can sometimes be super confusing. A small part of me still wants to go out and make poor choices, while the other more experienced part of me knows better.

Some of my friends are getting wifed up, while others are experiencing the joys of tinder. Some of us have landed our dream job, while others are still on the hunt. It makes me wonder if we’ll ever all be in the same life place or if this is just how life is?

A seasonal energy ball recipe with the ultimate festive combo, gingerbread and chocolate!I bring this up because the other day my friend DK (no, this isn’t an acronym to hide her name- we actually call her this despite the fact that I am the OG DK) was asking what she should serve at her housewarming party. 5 years ago this would have been called a pre-drink and there would be no food served unless chasers for booze count. And I suspect that 5 years from now, we would be appalled if nothing was served but won’t have time to care since we have to run home to relieve our babysitters.

Are we posers if we serve cheese plates and cocktails? Should I bring a vodka watermelon? What in the world do people expect at 25? Don’t answer that.

I know, I know, age is just a number. But turning 25 was the first time I felt old. I don’t mean old in the conventional sense, but more in the “my number actually reflects the fact that I am a responsible, self-sufficient adult” kind of sense. Every year before 25 I found it a lot easier to rationalize being dumb and selfish. Now I can’t get away with being a cheap tipper and using a student-status as an excuse, because I am SO not a student anymore.

I get that these things take practice and that one day I will master the perfect cheese plate (or so I hope!), but I just kind of wish I had it all figured out now.

For now, I’ll pop some of these Chocolate Chip Gingerbread Energy Balls in my mouth and pretend like I’m not giggling like a little girl at this statement

Chocolate Chip Gingerbread Energy Balls

PREP TIME 5 mins
Total Time 5 mins

Ingredients

  • 1 cup raw cashews
  • 1 cup medjool dates, pitted*
  • 1 T blackstrap molasses
  • 1 1/2 tsp dried ginger
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp sea salt
  • 3 T dairy-free chocolate chips (I use Enjoy Life)

Instructions

  1. Add cashews and dates to a food processor or very high-powered blender and process on high.
  2. Once broken up into pea-sized bits, add in molasses and spices but not the chocolate chips.
  3. Process until everything is completely broken up and holds together when formed into a ball. This should take around 3-5 minutes.
  4. Stir in chocolate chips (do not process them in).**
  5. Roll into 15 small balls and place on a plate or in a container in the freezer for 15 minutes.
  6. Remove from freezer and store in the fridge for several weeks.

Make sure they are sticky. If not, soak in hot water for 20 minutes before using. *If you prefer to drizzle with chocolate rather than stir it in, melt chocolate in microwave for 30 seconds and then add to a small-tip piping bag or ziploc bag with a small hole cut in the corner. Drizzle over each ball and then place back into freezer for another 5 minutes to harden.

    IMO you’re never too old for ball jokes. Or god help me if I do get that old.

    Yeah, I think the mid-20’s have been a weird time for me – I’m still battling with feeling like a child (still getting ID’d, oh and living with my parents…) but feeling like a proper adult (business breakfasts, taxes and early nights). I have no idea if that’s how a 26 yo is meant to feel, but then I am still making ball jokes…

    I know exactly what you mean. I turned 25 the other day and totally agree that “my number actually reflects the fact that I am a responsible, self-sufficient adult”. I don’t think we will ever have it all together (whatever that is). I think we can still make balls jokes until we are rocking perms and blue rinses 😉

    It depends on the day for me. Sometimes I feel nothig close to my age (I’m in my 30s) and then I will have that wow I am so old feeling wash over me. I think sometimes it especally happens if I see a picture of a friend or someone from college that I don’t talk to anymore on Facebook, and I see they have aged! If they have, I must have too. So it’s a day by day thing. 🙂

    You have accomplished so much for 25! I think we all do things at a different rate and in different orders. I have a house and a baby but I’m still figuring out what I want to do with my life career wise among other things. That’s the fun of it! I take it one day at a time these days…I’m almost 28 so I think maybe I’ll have it more figured out by 30, but really who knows!

    I am 32 with 3 kids and still feel the same way, so at this point I think that’s just life 🙂 As kids I think we expect to “turn into an adult” when the time comes, but, there is no such thing, we just keep on keeping on the path we’re on being who we are. These balls look great. And no you are never to old for hahaha balls 🙂

    For me, old set in in September when I turned 26. I feel like 25 you’re kind of in the middle. Far enough from 30 but close enough to 20. 26 is just old. So close to 30 it’s insane and I’m not ready for it. However, I am ready for these energy balls and appreciate a good punny post like the matcha energy balls hahha.

    I’m 24 and I don’t feel old, but sometimes I feel older than others at the same age. Sometimes I think jokes that everyone laughs at are stupid and childish, but on other days I laugh at even more stupid things. To be honest, I find excessive drinking is not very grownup and often shake my head when people at my age or even younger do it…there is no point in that for me. But to each their own. I guess the reason why you feel so “old” now is that you made the decision to start your own business this year, that’s kind of a grown-up thing to do 😉 Everyone has their adult AND childish aspects, and that’s good.

    Ahhh I know EXACTLY what you mean. 25 is such a weird age! I feel like such an adult in some senses, but in others I just want to throw off all my responsibilities and act like an 18 year old. Life is weird. I feel like I’m at the age where I should have my shit together, but that is absolutely not the case. Meh – such is life.

    Oh gosh…ok these look amazing. Chocolate and Gingerbread aren’t two things I think to put together, but they look and sound oh-so right.

    Second of all, I wholeheartedly feel you on this 25 business. I just turned 25 a few months back and it has been such a weird transitional age. Earlier this year I decided to go back to school, essentially starting from scratch and am in a whole crazy transitional state while a ton of my friends are climbing their respective corporate ladders and getting wifed up. It’s so interesting to see!

    And I also support adulting as a verb/use it all the time.

    I reckon you actually have the perfect balance- Work ethic and the corresponding balance of ‘living’- I saw it in living proof. I think i’m still in abit of a confused state, but getting there!

    Oh I understand the age dilemma. I turned 30 this year and my friends and family are all at different stages. I battle with the idea of should I be out and about or is it ok to just wanna PJ it up? lol You have an amazing career so don’t worry about the # or whether you have it “all together”! You’re amazing lady.

    OMG i was still going out a lot on the weekends (and sometimes during the week) when I was 25 three short years ago. Now I like to day drink so I can crawl in bed early and not be hungover. 🙂
