WHAT?!

I know. I didn’t realize it either. But then I looked back through the archives and realized that somehow the last energy ball recipe I posted was on December 8, 2015. I mean my Chocolate Cherry Energy Balls were hard to top, but I don’t know that they merit a complete break from the balls.

I tried to figure out how this could have possibly happened. Was it that I overdosed on energy balls after Energy Ball Week? No. Was it because you guys are obsessed with my Blueberry Muffin Energy Balls and I was just living off that post ball high? Definitely not. Was it that I opted for bars instead of balls in 2016? Blasphemy! Never.

The truth? I honestly have no excuse. I feel like 2016 got away from me. Between the travel, the move and living without my food processor for 6 months, somehow the balls got left behind.

If you guys have watched any of my YouTube videos lately, you know I’ve been obsessed with dried mango. They were one of my Winter favorites, featuring prominently in my Trader Joe’s haul and of course made me Israel packing list. Because when I wasn’t eating balls in 2016, I was instead eating dried mango.

But here’s the thing I noticed about my body. Because dried fruit is so high in sugar, I need some healthy fats to give them some staying power. This is why my energy balls always have a combo of dried fruit and nuts of some sort.

I have absolutely nothing against sugar. And especially not when it comes from natural sources like fruit, but I just know my body and even if it’s healthy fruit I just need some protein and fats to help it last a little longer.

This will become your new favorite energy ball recipe!So I decided that it was about time I put together my love of dried mango with my love for balls (yeah I just said this…) and this was how my Mango Almond Energy Balls were born.

Andddd because I know you’ll ask, DON’T USE FRESH MANGOS. The number of people who have tried using fresh blueberries in my Blueberry Muffin Energy Balls…yeah, consider this fair warning.

But if you’re up for the soak, make these balls! They’re officially my new favorite and likely means there won’t be another energy ball recipe for another year because I’ll just be snacking on these.

Mango Almond Energy Balls

PREP TIME 10 mins
Total Time 10 mins

Ingredients

  • 1 cup dried mangos, chopped and packed
  • 3 medjool dates
  • 1 cup raw almonds
  • optional: 1/2 cup unsweetened dried coconut

Instructions

  1. Add mangos and dates to a food processor and process until broken up into pea sized bits.
  2. Add in almonds and process until mixture is broken down completely and when pressed together it holds its shape.
  3. If mixture is too sticky to roll into balls, place in the refrigerator for 20 mins.
  4. Roll into ping pong-sized balls.
  5. Roll balls in coconut, if used.
  6. Place in freezer for 30 mins to harden.
  7. Store in fridge and remove when ready to eat.

    Never would have thought to put mango with almonds, but I can already taste the sharp nuttiness of the almonds with super sweet mango! Great combo1

      Mango and Almond is one of my favorite combos! I’m realizing that I actually have quite a few mango + almond recipes on the blog!

    I’m obsessed with dried mango! I’ve been buying big bags from Costco and it’s embarrassing how quickly I go through them haha.
