Overnight Gingerbread Oats

I am so over this weather in Toronto. Seriously, winter needs to be done. The only upside to this extended winter? It is somewhat socially acceptable to post recipes with “wintry” ingredients. Squash, pumpkin, peppermint, gingerbread…Yes I am the kind of person who does not wear white after Labour Day.
Gingerbread Overnight OatsSo today I have one of those recipes for you, Overnight Gingerbread Oats. Not surprisingly these taste amazing topped with a big ole’ dollop of peanut butter! A short and sweet post for a short and sweet recipe.

Overnight Gingerbread Oats

  • Prep Time: 5 minutes
  • Total Time: 6 hours
Scale

Ingredients

  • 1/2 cup rolled oats
  • 1/2 T chia seeds
  • 1 tsp ginger
  • 1/8 tsp cinnamon
  • 1/8 tsp ground cloves
  • 1 tsp blackstrap molasses
  • 1/4 tsp vanilla extract
  • 1/2 banana, sliced thinly
  • 1/2 cup unsweetened vanilla almond milk?+ more for next day
  • 1 scoop peanut butter (optional)

Instructions

  1. Mix together all dry ingredients in glass jar or container. Shake.
  2. Add molasses, vanilla, banana and almond milk. Give another good shake.
  3. Place in refrigerator overnight or for at least 6 hours.
  4. Next day add more milk to thin out. Top with a scoop of peanut butter (I used PB2).
