Not like, I’m a half hour late everywhere I go kind of bad timing, but more like, I just bought this brand-new electronic and an even newer model comes out the day after I buy it kind of bad timing.

I have come to terms with my fate, but nonetheless I still can get pretty bummed when the universe seems to run on a schedule that’s completely contradictory to my own.

Exhibit a) Remember a few weeks ago when I posted a review of the top plant-based proteins on the market? Well of course on the day when I publish it I discover that one of my favorite brands ever, Epicure has come out with their own vegan protein powder.

I’m pretty stoked to be partnering up with them again this year to share some of their healthful new ingredients with you.

In case you don’t know about them, Epicure is a Canadian brand (woot GO LOCAL!) that makes all-natural, clean foods and simple bakeware to make healthy cooking easier and faster. Basically, our mentalities are the same: get more people in the kitchen, cooking REAL FOOD but without having to slave away for hours.

This year they’ve launched a new line of Enhanced Nutrition products that consists of nutrient dense foods that support optimal health. You’ll find products like this Optimal Vegan Protein Blend (made up of pea, hemp and rice protein + probiotics), Turmeric and Ginger Tea, and Cocoa Crunch sprinkle, which is packed full of antioxidants and adds a delicious boost to things like oatmeal and smoothies.

I know I’m sounding super preachy right now, but that’s only because I truly do love this company. They never waver from their mission to bring healthy food to the masses by encouraging them to take control of their diet without them feeling like it’s an intimidating process.

We all spend way too much money on protein bars and way too many of the options on the market are made up of ingredients you cannot pronounce. It’s time to start making them at home! Your body and your wallet will thank you.

And just for good measure, I made sure the recipe only required minimal equipment and zero baking whatsoever. Yes, my friends – a bar recipe that doesn’t require a food processor!

Vegan Almond Joy Protein Bars

  • Prep Time: 10 minutes
  • Cook Time: 20 minutes
  • Total Time: 30 minutes
  • Yield: 12 bars 1x

Ingredients

Instructions

  1. In a large bowl combine oat flour, coconut flour, coconut flakes and protein powder.
  2. In a separate bowl combine softened coconut oil and vanilla extract.
  3. Add maple syrup and 1/4 cup of non-dairy milk to dry ingredients and stir together. Add in coconut-vanilla mixture.
  4. Texture should be dry but still able to hold shape. Depending on your protein powder and coconut flour, you may need to add 1-2 T of additional milk (I usually use 2).
  5. Line an 8 x 8 inch baking dish with plastic wrap or parchment paper.
  6. Add protein bar dough to dish and spread out using hands. Make sure dough is evenly spread.
  7. Place in freezer to sit for 20 minutes.
  8. Remove from freezer and cut into 12 bars.
  9. Melt chocolate (in microwave or in double boiler on stovetop) and drizzle bars with chocolate.
  10. Store in an airtight container in the fridge for up to 2 weeks or longer in the freezer.

*you can make oat flour by grinding up rolled oats in your blender

    Wow, this protein powder sounds divine, I love coconut! I’ve bough protein powder a while ago but haven’t been using it much, thanks for this recipe, I’ll use it to make these healthy bars 🙂

    Definitely giving these a try!

    Instead of the chocolate chips, you can always make your own chocolate with coconut oil, cocoa powder and a little maple syrup. I do this and mix in coconut, dried fruit and/or nuts in small molds for sweet treats. 🙂 Perfect this time of year when it’s cool.

    I want to try these! If I only have vanilla protein powder, should I keep everything else the same and will they still taste coconutty?

    Almond joys are my FAVE, but my one gripe is they don’t come in a dark chocolate variety. Problem solved, and I love that these are made with way better ingredients too! (PS Thanks for the scoop on Epicure!!)

    Sometimes I can be so bad with timing as well–I can underestimate how long something will take me! But this recipe looks so so good. I loved almond joys as a kid!

    I have to say – your protein bars always look awesome! To be honest, I don’t like making my own protein bars at home. I actually prefer storebought. I always use my food allowance on my corporate card when I travel to try new protein bars I see in the grocery store!

    That protein powder sounds great! You are literally a SAINT for this recipe. I’ve been looking for high protein snacks and bars that aren’t completely full of carbs and nuts, and this is perfect. I can’t wait to make these to munch on between meals.

    Epicure sounds like an awesome company! That’s awesome you get to work with them! And these bars! I love almond joy’s but never eat them anymore (hello, sensitive stomach). Gotta make these bars soon!
