What Makes This Recipe So Great?

Besides the fact that these healthy peanut butter cookies taste absolutely delicious, here’s why you’ll want to make this recipe:

  1. Flourless + No Refined Sugars – hold the flour please! No flour is required to make these cookies. Similarly we’re using coconut sugar instead of traditional refined sugar.
  2. 3-Ingredients – that’s right, you only need 3 ingredients to get a healthy cookie on your table
  3. Perfect texture – there is nothing better than a chewy peanut butter cookie recipe. These fit the bill perfectly!

Ingredients Needed

  • Natural Peanut Butter – you’ll want to use natural, smooth peanut butter. Ideally it should be thick and the oil should be well mixed in. If you’d rather use almond butter or a different nut butter you absolutely can!
  • Coconut sugar – you could also use brown sugar but using coconut sugar keeps these cookies refined-sugar free.
  • Egg – this helps to bind your cookies together so I wouldn’t recommend replacing with a vegan alternative.

How to Make Healthy Peanut Butter Cookies

STEP 1: MAKE COOKIE DOUGH

Combine all ingredients in a large bowl.

STEP 2: PREP PAN + BAKE

Roll dough into 12 balls and flatten lightly with the palm of your hand. Using a fork, score cookies in opposite directions while flattening slightly more. Bake for 12 minutes. Remove cookies from oven and let sit on baking sheet for at least 10 minutes – this step is very important! Do not try to remove from pan before this. After 10 mins you can remove from pan and allow to cool to room temperature on a wire rack.

Easy Mix-Ins

Looking for some easy mix-ins? Here are some ideas:

Chocolate chips – stir in a 1/3 cup chocolate chips

Crushed peanuts – stir in a 1/3 cup crushed peanuts for a little texture.

Cocoa powder – add 2 tbsp of cocoa powder to your dough to make chocolate pb cookies.

Flaky sea salt – sprinkle your cookies with flaky salt just before baking if you’re into a little salty sweetness.

Storage Instructions

Store your leftover cookies in an airtight container on the counter for up to 3 days or up to 1 week in the refrigerator.

To Freeze: Place cookies flat into a Ziploc or freeze-safe bag. Remove all the air and freeze for up to 3 months. Thaw and eat or eat frozen if you’re anything like me!

  • 1 cup natural, smooth, organic peanut butter (it should be smooth and drippy)
  • 1/2 cup coconut sugar
  • 1 large egg

  1. Preheat oven to 350 degrees F.
  2. Combine all ingredients in a large bowl.
  3. Line a baking sheet with parchment paper or a silicone mat.
  4. Roll dough into 12 balls and flatten lightly with the palm of your hand.
  5. Using a fork, score cookies in opposite directions while flattening slightly more.
  6. Bake for 12 minutes.
  7. Remove cookies from oven and let sit on baking sheet for at least 10 minutes before removing and either serving or storing. See storage instructions above.

  1. these are soooo delicious! i ate 6 of them within 2 hours, theyre so easy and addictive. i added 2 1/2 tablespoons of greek yogurt because whyyy nottt? and 1 teaspoon of chia seeds , and sprinkled maldon salt on top.
