{Healthy Spring Salads} Sushi Salad w/ Carrot-Ginger Dressing

If you ignore the fact that it’s freezing outside (at least in this neck of the woods), Spring is totally here! You know what this means right? 1 in every 7 days of the week might actually be nice enough to not wear your winter coat. True story, it’s not out of norm for it to snow in May here. Remind me why I live in Canada again?

But I have heard birds chirping and I have downgraded from parka to pea coat so the signs are definitely there. Before you know it I’ll be complaining about the sweltering heat and joining a nudist colony because I can no longer stand the feeling of clothes sticking to my body. That thought has crossed my mind…

Spring-SaladsBut today is not about nudist colonies! It’s time to celebrate the longer days, the flowers blooming and the re-introduction of non-squash or apple-based recipes. Wahoo! So my fellow veggiephile bloggers and I have teamed up once again to bring you ALL THE FRUITS AND VEGGIES and welcome spring in style!

Remember when my New Years Resolution was to eat a salad a day? Yeah, I don’t either. Well actually I haven’t been terrible at it. I would say I eat some sort of salad on most days, but I haven’t been too diligent about it. Goal setting has never really been my strong suit. Maybe it’s my lack of creativity when it comes to salads. I tend to pile on the same things and then I get bored. But now that spring is here and I can actually purchase fruits of veggies that haven’t been shipped halfway across the world before consuming them, I think it’s time I step up my salad game.

We’ll call it a spring resolution cleaning of sorts.

So grab your knives, peelers, shredders, spiralizers and all your other various kitchen gadgets so we can welcome Spring, foodie-style!

Kelly and I both agree that we are basically foodie soulmates and are obsessed with all the same food. No surprise we both made Asian-themed salads. Her Chinese Chopped Salad with Orange Sesame Dressing is topping my to-make list!

Chinese Chopped Salad with Orange Sesame DressingIt’s beyond me how my jet-setter bestie Lee has time to cook, let alone blog (check out the incredible behind-the-scenes look at her Propel Water Photoshoot!), but as per usual she never ceases to amaze me with this gorgeous Strawberry Arugula Salad with Poppyseed Dressing.

Strawberry Arugula Salad with Poppyseed DressingYou didn’t think we were gonna leave out our beloved fruit did you? Lexi has got you covered with this delicious sounding Honey Lime Fruit Salad with Homemade Cinnamon Sugar Chips that are grain-free. She is the Paleo queen after all!

Honey Lime Fruit Salad with Homemade Cinnamon Sugar ChipsAnd finally, yours truly. Maybe not the most “spring-y” of salads, but this Sushi Salad with Carrot-Ginger Dressing will honestly fulfill your sushi cravings without actually having to go out and buy it (unless you make it at home in which case, I salute you). Plus it’s made with cauliflower rice so you can sneak that extra serving of veggies in there too!

Sushi Salad with Carrot Ginger Dressing

Sushi Salad w/ Carrot-Ginger Dressing

PREP TIME 15 mins
Total Time 15 mins

Ingredients

  • 1 small head of cauliflower (for cauliflower rice)
  • 1 large carrot
  • 1 medium english cucumber
  • 1 avocado
  • 4 pieces roasted seaweed (I use Sushihane)
  • 2 pieces of sushi grade salmon or tuna steaks
  • 1 1/2 T coconut aminos (or tamari or soy sauce)
  • 1/2 T rice wine vinegar
  • 1 T fresh ginger, peeled and grated
  • 2 tsp honey
  • 1/2 cup grated carrot
  • 1 tsp water

Instructions

  1. For the salad:
  2. 1. To make cauliflower rice, chop small cauliflower head into florets and then add to a food processor or blender. Pulse until rice consistency is reached (about 1 minute).
  3. 2. Peel and grate carrot (reserve 1/2 cup for dressing).
  4. 3. Seed and chop cucumber and chop avocado.
  5. 4. Rip seaweed into bite-sized pieces.
  6. 5. Chop salmon or tuna into bite-sized pieces.
  7. 6. Combine all in a large bowl.
  8. For the carrot-ginger dressing:
  9. 7. Add all ingredients to a blender or food processor and process until well combined. If too thick add a teaspoon of water.
  10. 8.Top salad with dressing and serve.

    I am totally a SPRING girl. I also really enjoy summer. I think I am the one person that doesn’t complain about the heat. I freakin’ LOVE it! I do love hoodies, boots, and scarves but I would be okay if I never had to wear them again 🙂

    I want it to be warm soooo badly. We have some Canada weather stopping by early this week and it’s really the pits. I highly recommend you move farther south (I should too). But that said I’m so excited for spring and these salads are just the thing to get me daydreaming of warmer days to come (maybe next weekend!).

    Ugh, I think I’ve had one or two days this month where I haven’t had to wear a winter coat? Winter, please die.
    And ohmygod sushi salad. Basically, my taste buds in a salad. I remember ordering a sushi salad at Earl’s like 2 years ago, and apparently I really loved it because I still remember it.

    I do the SAME thing with salads, like I only use the same toppings and then eventually I’m like gross so I don’t eat them for a while. BUT! I have this really good restaurant copy cat salad up my sleeve that’ll be appearing soon. 🙂 aka next week

    I love a good salad but I get stuck in a rut! These salads are all great and very unique! My favorite season is summer for sure! I could have summer 24/7 and be totally ok with it!

    I’ve been slacking big time on the veggie front lately. I used to be so good with eating at least one salad a day, but these days I’m lucky to get in one salad a -week-. Ugh. I blame the cold and the fact that I’m just sick of winter. If I had my way, it would be fall all year round.

    How cute is that sushi salad! It reminds me of the time I used to pack bento boxes for lunch – my chef gave me the weirdest looks, but I enjoyed them a lot.     mmmmm salads 🙂 I’m not a sushi fan at all, but I do crave salads like no ones business in the summer!! I don’t like typical salads though. I’m more of an edamame salad, pasta salad or some sort of tomatoes basil mozzarella salad thing. Does that make any sense? lol Although Ive been chewing down on a certain spinach salad lately. Its just been hitting all the craving spots!

    I adore salads – I tried to eat a salad a day for a whole week – thinking it might work much like a rain dance and move spring here quicker – alas the whole thing backfired and we are back to lows in the 30’s this week – with 29 F on Wednesday!

    All of these salads soud good! It’s spring here but currently still feels like the middle of winter. I love sushi but never make it at home, I need to try this dressing! It would probably also go perfect with my typical spinach and sweet potato salad. I love ginger and sweet potatoes.

    I made a huge salad for lunch everyday at home – greens, grilled veggies, goat cheese, chicken sausage, avocado… how #paleo of me.

    Last summer and fall, I overdid it on salads simply because my CSA gave me a couple heads of lettuce every week. That’s a lot of greens for just the Hubby and me. It’s been a few months though, with only a salad here or there, but certainly not everywhere, so my lettuce loving days are slowly and surely starting to perk back up. Just in time for Spring and this post, which had so many amazing and beautiful salads, I don’t even know where to begin. Thanks for sharing all the deliciousness.
