Slow Cooker Apple Pie Steel-Cut Oatmeal

In editing these pictures I came to the realization that I never talked about how I spent my birthday. I’m sure all of you were sitting on the edge of your seats wondering what I did. My life is fascinating, what can I say.

Slow-Cooker Apple Pie Steel-Cut Oatmeal - an easy breakfast made from wholesome ingredients but tastes like apple pie! // thehealthymaven.comOkay, clearly not but I do feel incredibly blessed to have spent my birthday with some of my favourites. Lunch at Gilead with C, and dinner with my besties and family at Hudson Kitchen. Great food, better company, 5 rounds of dessert, what more could a girl ask for?

New photography boards. That’s what a girl can ask for. No need to discuss what C originally gifted to me for my bday or my inability to disguise that I didn’t like it. In his defence, he went big last year and after buying me my red beauty, he made it pretty much impossible to top it. It’s the thought that counts, right? Please don’t judge me.

Eventually I ended the awkwardness of the gift that never was by just telling him exactly what I wanted, wood photography boards in all different colours for my food pics. The reality is that if I wanted to build them myself, I probably could have but I just didn’t want to. So instead I asked my amazing engineer of a boyfriend to put his handy skills to use and gift me with his manual labour.

I say “we” liberally in that I had nothing to do with the building of the boards nor are DIY projects new to C. If you’ve ever see our apartment you know how handy the boy is. I pride myself on being a professional “breaker”. I break everything. He fixes it. Match made in heaven…debatable who got the better end of the deal.

Needless to say, the photography boards ended up being a fun activity (for him) and got me so excited about all things DIY that I went a little crazy with the Fall decor around the apartment. I think this makes us old if this is how we spent the weekend? The round 3 West Wing marathon totally sealed the deal.

Some names were thrown out there that should not be repeated on the blog. But if your imagination is as good as mine, you might be able to figure them out.

Today is your first taste of the boards. I started with the white one for this Slow Cooker Apple Pie Steel-Cut Oatmeal but I am super excited to try out the grey, brown and blue boards. Never in a million years did I expect to find myself getting all worked up over photography boards, but I guess everything changes when you hit a quarter century old!

p.s. Thanks to my sis for the awesome glass milk jars. This recipe was like a birthday gift photo shoot!

Slow Cooker Apple Pie Steel-Cut Oatmeal

Cook Time 8 hrs
Total Time 8 hrs
Serves 4     adjust servings

Ingredients

  • 1 cup steel-cut oats*
  • 4 cups unsweetened almond milk
  • 2 medium apples, chopped
  • 1 tsp coconut oil
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 T maple syrup (feel free to sub honey for vegans) - note: I don't like my oats super sweet so feel free to add more for added sweetness
  • splash of lemon juice

Instructions

  1. Add all ingredients to your slow cooker. Stir.
  2. Cook on low for 8 hours or high for 4 hours.**
  3. Give it a good stir.
  4. Top with your favourite toppings. I like peanut butter and crunchy apples.
  5. Store leftovers in fridge for up to 1 week. To reheat add a splash of almond milk and heat up in microwave.

    As soon as I saw the first picture in this post I made a mental note to include in my comment that it may be my favorite photo of yours yet. Then I started reading and was very impressed with myself for apparently noticing the difference with the new boards AND the milk jugs because those are what I loved most (along with the overall color palette). I may not be much of a photog, but at least I’m developing an eye?

    Yayyyy for forcing your bf to make you photo boards! I made one (you know… the only one I use in my photos) but I have white paint and a spare board I just need to put it together…. Ohhhhhh and about the ISO/ I think you’re right. I came home yesterday and experimented with it a bit….. going to remember that for the next photo shoot. Thanks love!

    Can I order Slow Cooker Apple Pie Steel Cut Oatmeal? And I like it to arrive fresh and warm.
    Honestly, I would order and buy everything in Canada (aka from you) and the US if it weren’t for the shipping costs. My Vitacost obsession died with the additional custom charges.

    Yum! I make a similar version of this but on the stove top. It’s great for weekend mornings when I have more time, but your recipe would be perfect for a weekday! The best birthday gift I’ve ever gotten was a cruiser bike from my boyfriend! I didn’t ride it for over a year because I was too scared to bike in the city, but now I use it all the time!

    I just need to make a huge batch of oats for the week in my slow cooker. I literally run around my house every morning that I want oats because I’m so picky about my oats but ugh. I just need to bite the bullet and admit that my life would be 10x easier with oat prep. lol.
    I’ve gotten a lot of wonderful presents… my family is the best. But Norm for my 17th birthday beats it all. love that guy. rip

    That is too cute. I like to emply my engineer of a husband for handiwork too. The sad thing is that I too have an engineering degree, but it’s best that I don’t do “real” engineering work. I once tried to switch out a light switch faceplate and bad things happened. Never again.

    I was skeptical of using twice as much water as the package of oats instructed, but since it was to be left overnight, thought maybe I would lose that much water by morning. I was wrong. I wound up with oatmeal soup, and was pretty disappointed.

      Hi Michael, I am sorry to hear this. I and many others have made these recipe several times and have never had any issues with leftover liquid. If anything I need to add a bit more liquid in the morning! Slow cookers can be finicky so perhaps this had something to do with it.

    I’m new to using coconut oil. Is it in this recipe for flavor or is the oil needed to make the recipe cook properly?

      it’s used for both flavour and to help the oatmeal not stick to the pot. You can substitute butter!

    This recipe is delicious but the cook time was only 4 hours on low if I didn’t check it the food would have burned. The oatmeal was perfect and creamy.
