Since moving to California I have both a deep confusion and a new appreciation for seasons. No, I don’t find myself craving 4 seasons because that would mean winter and your girl already paid her winter dues. But I do find myself wanting a bit more predictability. I’ve come to learn that seasons in Northern California mean either “foggy” or “not foggy”. Or a daily cycle between fall and spring, both of which could mean a warm sunny day or grab your layers cause it’s gonna be chill to the bone.

But something else that comes with these weird seasonal patterns is that there’s almost always something in bloom. I’ve totally become spoiled living here and I’m not gonna lie, I’m a complete diva when it comes to my produce. I try to keep me commentary to myself (especially when I’m back home in Toronto) but man does produce taste better out here.

We’re often asked why we moved to California and without a cent of sarcasm I respond “for the produce”. I’m really not kidding. When the quality of your produce is high up on your list of values, that’s a reasonable choice to make. I doubt Mama Maven agrees…

Marinated Easy Hoisin Garlic Salmon

Now I get and appreciate that not everyone has this access or the privilege to move. I feel you. I lived on the East Coast for 27 years and know what it’s like to eat frozen strawberries 10 months of the year and squash as your main source of vegetables during those cold winter months. It’s important to embrace your culture and get creative, but also celebrate when the seasons turn and more variety appears. Unlike California, there is some excitement when berry season, or asparagus season or peach season arrives. That is definitely something I miss.

But despite the move, our meals have changed very little. I grew up pretty traditionally when it came to food and I still feel like I hold onto this vibe. A protein, a carb and a vegetable. I change it up every now and then but these are the meals I love cooking and truly enjoy eating. Especially the ones that are ready quickly.

This Easy Hoisin Garlic Salmon and Coconut Rice is a staple. I like pairing it with sautéed garlic green beans or swap for whatever is in season. The Easy Hoisin Garlic Salmon is actually a recipe from my mom. In fact it’s the first recipe I ever cooked for C! Though to be fair, it’s hard to call it a recipe. The Soy Vay Hoisin Garlic Sauce is key and you literally marinate salmon in it and bake. This was the extend of my 21 year old cooking skills…

It was enough to keep C around so clearly it was a winner. It’s still on rotation 7 years later, just slightly amplified with the coconut rice which feels fancy but like the salmon is really just mixing two ingredients.

No matter where you live in the world or what season it is, this is an easy weeknight meal you can get down with. I promise you!

Easy Hoisin Garlic Salmon and Coconut Rice

  • Cook Time: 40 minutes
  • Total Time: 50 minutes
  • Yield: 2 servings 1x



For the Salmon:

For the Coconut Rice:

For the Garlic Green Beans:


For the salmon:

  • Place salmon in a shallow bowl and coat with marinade.
  • Allow to marinate for at least 10 minutes or longer.
  • Preheat oven to 400 degrees F.
  • Place on a baking sheet and bake for 10-12 minutes or until done to liking.
  • Remove from heat and serve.

For the rice:

  • Cook rice as you normally would, using coconut milk in place of water.
  • Time varies according to type of rice but for short grain brown I add coconut milk and rice to a pot and bring to a boil, I cover the pot and lower to a simmer for 30 minutes before removing to let stand for 10 minutes.
  • Remove from heat and serve.

For the garlic green beans:

  • Add olive oil to a pan over medium high heat and cook for 1-2 minutes or until brown.
  • Add green beans and saute for 2 minutes.
  • Cover pan with a lid or tin foil and let stand for 2 minutes.
  • Remove lid and add marinade and stir to combine.
  • Cover again and let stand for 3 more minutes.
  • Green beans should be done and ready to serve.
