This Simple Kale Tahini Salad makes the perfect dinner base or side dish for a quick and healthy weekday meal. Pair it with some protein or eat it on the side for a healthy dose of greens.
I’m gonna need you to bear with my sassitude for a moment.
I love what I do. So much so that sometimes it’s hard to stop working.
Apparently other people love what I do too. This is a concept that still blows my mind and makes me wonder how in the hell I got so lucky.
Nevertheless, girlfriend’s still gotta pay her rent, so I do make money off the healthy maven.
SHOCKER.
Kidding, clearly the exorbitant number of ads gave that one away.

I get to work with some incredible brands who I absolutely love and support their mission. The relationship is mutually beneficial.
And then there’s the brands that haven’t quite comprehended the concept that the currency I work in is dollars.
Unfortunately, no my landlord doesn’t accept coupons for free pomegranate juice!
It’s actually laughable when brands who have multi-million dollar marketing campaigns explain that they’d love to work with me, and can k work for free? Well if that’s the case, I’m so looking forward to approaching my dentist and letting them know how much I’d love to have them work with me for free. What fun!
I do make one exception to the rule, and that’s for kale salad.
I know what you’re thinking, cheque, pay pal and kale salad? Yup. I speak the truth.
In particular, I’d do exceptional things for gusto 101’s kale salad.
Well today’s version is not a replica of their kale salad, because it’s impossible to replicate (or not include an entire bottle of oil) but my version is for when you’re in a hurry, on a budget (unless you’re rolling in pomegranate juice coupons!) or just need an extra dose of greens.
And now I not so subtly drop mic.
PrintSimple Kale Tahini Salad
- Prep Time: 10 minutes
- Cook Time: 0 minutes
- Total Time: 10 minutes
- Yield: 4 servings 1x
Ingredients
- 2 heads kale
- 1 lemon, juiced
- 1 tbsp olive oil
- 1/4 tsp sea salt
- 1/4 cup dried cherries (or any dried fruit)
- 1/4 cup pumpkin seeds
tahini dressing:
- 2 tbsp tahini
- 1 garlic clove, minced
- 1/2 lemon, juiced
- 1 tbsp pure maple syrup
Instructions
- Remove kale from stem and cut into small pieces.
- Add to a large bowl and top with lemon juice, olive oil and sea salt.
- Massage liquid until kale until it has completely wilted. This will take around 3-5 minutes.
- Top with dried cherries and pumpkin seeds.
- In a small bowl combine all ingredients for tahini dressing.
- Top salad with tahini dressing and serve.

And I also love to hear it loud and clear, because it reinforces my belief in myself and my work, because although I find it as obvious that you don’t work for free, sometimes I have a harder time seeing it as obvious regarding myself. I mean, sure there are some exceptions when even if you work free there are some benefits to you that make the whole arrangement beneficial, but what I meant to say I need to have more confidence in my own worth and quality of work.
