Everyone deserves a banana muffin every now and then amirite?! So I set out to master the perfect paleo banana nut muffin and I’m happy to say I succeeded. I definitely learned a few tips along the way so in addition to the recipe I’ll be sharing some of my best paleo baking tips. Let’s get into it…

These paleo banana nut muffins are made #glutenfree and #paleo with almond meal and coconut flour as well as the delicious sweetness straight from bananas!

How To Make Paleo Muffins

The key ingredients in these paleo banana muffins is replacing regular whole wheat flour with almond meal and coconut flour. Note: There is a difference between almond meal and almond flour. Almond meal is ground whole almonds whereas almond flour is ground blanched almonds. The skin of the almonds is a great source of a fibre and does in fact affect the final texture of the recipe. Be sure to use almond meal and not almond flour. If you’re wondering how to make nut flours, check out this DIY post so you can make them at home (for cheaper!)

Coconut flour is also a great substitute for paleo muffins. Coconut flour is also high in fibre and a great source of healthy fats. It is, however super absorbent so don’t try to replace it with other types of flours. It is not a 1:1 ratio with any other flour. FYI this is why you’ll often find recipes with coconut flour using a lot of eggs (it absorbs them right up!).

How Are These Paleo Banana Nut Muffins Sweetened?

One of my favorite parts of this recipe is that most of the sweetness comes straight from bananas! The only added sugar is 2 tbsps of honey, which you could omit if you don’t like things super sweet or replace with another sweetener. Note: Your bananas should be very ripe. The riper the bananas, the sweeter the muffins and since they’re basically sweetened entirely with bananas you want them to be very ripe for this paleo banana muffin recipe.

  1. These are delicious. My only change was I used coconut nectar instead of honey. Thank you for a great recipe.

  2. These muffins are delicious! I chose your recipe because it didn’t call for 18 cups of honey or something like that and sure enough it was just the right about of sweetness. It is certainly not sugary like those at the store, but it’s sweet enough that me and my kids love it. When I threw the almonds in my food processor, they didn’t end up powdery, but that was a bonus because the crunchy taste of the nuts was awesome. I just set aside some more bananas to ripen so I can make this again later this week. Must use caution and not eat more than one per day!

  3. I love your site and I want these muffins… just so ya know! I’ve just been browsing around and am so looking forward to more –I’m a newbie and I’m looking forward to seeing more in my inbox! x

  4. You two make my heart melttttt. Relationships are always changing, and I’m so glad to hear that your relationship with C has been changing positively.
I don’t have a SO, but my relationship with my…parents has definitely changed! Less stupid bickering, more understanding and unsaid helping on my part. They’ve always done the unsaid helping, so now it’s my turn to step it up 😉

    1. It only gets better with the parents! Sometimes I’m actually mortified to think how I treated them when I was in HS and younger and how little appreciation I had. So happy it’s improved, and I’VE improved!
