These Paleo Banana Nut Muffins are a delicious grain-free muffin recipe made with the sweetness of bananas and the heartiness of almond meal for the perfect paleo muffin recipe without noticing that they’re gluten-free too!

It’s crazy how much things can change in just a few short years. I used to be baking biscoff stuff chocolate chip cookies and now I’m sharing a paleo muffin recipe on my blog. Life is weird like that! To be fair, I am definitely not paleo but I also appreciate good grain-free recipe and love the challenge or keeping things paleo without sacrificing on flavor. Everyone deserves a banana muffin every now and then amirite?! So I set out to master the perfect paleo banana nut muffin and I’m happy to say I succeeded. I definitely learned a few tips along the way so in addition to the recipe I’ll be sharing some of my best paleo baking tips. Let’s get into it…

These paleo banana nut muffins are made #glutenfree and #paleo with almond meal and coconut flour as well as the delicious sweetness straight from bananas!

How To Make Paleo Muffins

The key ingredients in these paleo banana muffins is replacing regular whole wheat flour with almond meal and coconut flour. Note: There is a difference between almond meal and almond flour. Almond meal is ground whole almonds whereas almond flour is ground blanched almonds. The skin of the almonds is a great source of a fibre and does in fact affect the final texture of the recipe. Be sure to use almond meal and not almond flour. If you’re wondering how to make nut flours, check out this DIY post so you can make them at home (for cheaper!)

Coconut flour is also a great substitute for paleo muffins. Coconut flour is also high in fibre and a great source of healthy fats. It is, however super absorbent so don’t try to replace it with other types of flours. It is not a 1:1 ratio with any other flour. FYI this is why you’ll often find recipes with coconut flour using a lot of eggs (it absorbs them right up!).

How Are These Paleo Banana Nut Muffins Sweetened?

One of my favorite parts of this recipe is that most of the sweetness comes straight from bananas! The only added sugar is 2 tbsps of honey, which you could omit if you don’t like things super sweet or replace with another sweetener. Note: Your bananas should be very ripe. The riper the bananas, the sweeter the muffins and since they’re basically sweetened entirely with bananas you want them to be very ripe for this paleo banana muffin recipe.

Paleo Banana Nut Muffins – a grain-free muffin recipe with the sweetness of bananas and the heartiness of almond meal for the perfect paleo muffin recipe.

Ingredients

  • 2 cups almond meal
  • 1/3 cup coconut flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp sea salt
  • 3 large very ripe bananas, mashed*
  • 1/4 cup unsweetened almond milk
  • 2 T honey
  • 3 eggs
  • 1 tsp vanilla extract
  • 1/2 cup chopped, mixed nuts (I used a mix of pecans and walnuts)**

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a large bowl combine almond meal, coconut flour, baking soda, baking powder, cinnamon and sea salt.
  3. In a separate bowl combine bananas, almond milk, honey, eggs and vanilla extract.
  4. Slowly add wet ingredients to dry and stir until just combined. Stir in nuts.
  5. Line a muffin tray with muffin liners or grease well and fill each cup 3/4 full.
  6. Bake for 25 minutes.
  7. Remove from oven and let cool in tray for 20 minutes before removing from tray to cool completely on a wire rack.
  8. Will keep in an airtight container on the counter for 3 days or longer in refrigerator.

*I use super ripe bananas that I froze and thawed.
**Feel free to substitute with dairy-free chocolate chips (I like the enjoy life brand).

I became interested in health and fitness about four years ago and that refocuses so much of everything you do. Thanks for the recipe!

    1. totally. I think we we change our relationships with those around us change. It’s natural for some to fall apart and some to strengthen in that process of self-discovery. It can be hard to let go of the ones that no longer work but it’s worth it for the ones that do!

Our communication was 100% different. We both grew out of bad behaviors (I guess you can say), we grew up, and things were awesome. I should say – things are awesome. Because they still are, happily married for 7 months now 😉

He’s been home for two straight weeks now, which is an eternity compared to how it normally is, and tomorrow he shoves off, back to school again. I’ll miss him, although a banana nut muffin could be a good consolation prize.
