Healthy Baba Ghanoush

If you haven’t heard about it Amy at Long Drive Journey has started a new link-up! She is featuring one veggie and one fruit each month and challenging her readers to come up with new recipes using the featured ingredient. I think it’s a fab idea and am so excited about joining in on this month’s link-up. For August the vegetable is eggplant and the fruit is strawberries. I’ll be honest, I was a bit dismayed when I heard the first veggie pick was eggplant. It is probably my least favourite vegetable. I find it can be bland and doesn’t always sit well in my tummy. But I vowed to conquer my distaste and give this veggie a second shot! (Plus I love Amy and there was no way I wasn’t going to participate). I jumped the gun a bit by posting before the end of the month but patience has never really been my strong-suit.

Healthy Baba GhanoushI got to researching different dishes featuring eggplants that I’ve liked in the past hoping to find one I could healthify. And then I had an AH HA moment. Isn’t Baba Ghanoush made from eggplants??? How did I not realize this before? I love Baba Ghanoush. I’m a serious sucker for dips. I know, I know that’s where the calories creep up on you, but I really can’t help myself if they’re in front of me. Hummus, salsa, tzaziki, you name it…I’ll eat it! But my absolute favourite is by far Baba Ghanoush. I tried it for the first time in Israel, and after that there was no going back.

The problem? Baba Ghanoush can be loaded with fat and calories. Unnecessary fat and calories in my opinion. Now you know I’m not afraid to eat fat (hello nut butter!) but I would prefer to not use up my daily quota in two tablespoons of dip. At the same time I am not willing to sacrifice taste. So I got to work and this is my result. I could not be more pleased! With a side of carrots and Mary’s Gone Crackers (my fav!) I ate half of the dip by myself. But here’s the thing, this entire recipe is only 230 calories and 5 grams of fat. Regular Baba Ghanoush averages around 363 calories and 30 grams of fat (source). This makes for a perfect snack that you don’t have to feel guilty about.

Now it’s time to start preparing my strawberry dish…

Healthy Baba Ghanoush

PREP TIME 5 mins
Cook Time 25 mins
Total Time 30 mins

Ingredients

  • 1 large eggplant
  • 1 tsp olive oil
  • 1 garlic clove, minced
  • 2 T plain 0% greek yogurt
  • 1/4 tsp dried cumin (optional)
  • salt & pepper, to taste

Instructions

  1. Preheat oven to 350 degrees F.
  2. Chop eggplant in half and place cut sides down on a baking sheet lined with parchment or a silicone mat.
  3. Roast eggplant for 20-25 mins or until tender.
  4. Remove from oven and let cool.
  5. Once cool scoop out eggplant flesh and place in food processor or high-speed blender.
  6. Add all other ingredients.
  7. Pulse until well combined.

    Eggplant is always a vegetable I forget about purchasing at the grocery store. I’m not even sure why since there truly are many recipes for it. I once made eggplant jam. It was pretty good.

      Eggplant jam?!?! I can’t even comprehend what that would taste like! I’m also a little thrown off by the look of eggplants. They’re so funny shaped!!

    Eggplant is actually one of my favorite veggies! I agree that it can be a bit bland when not cooked right though… my cafeteria at college sometimes just steams it, and it has zero flavor and a weird texture. But when they roast it, it’s fantastic!
    I’m so glad you decided to make this because Baba Ghanoush is one of my favorites too! Love the use of Greek yogurt, it makes dips so creamy and yummy. 🙂

      Roasting it makes it so much better! I can’t even imagine eating steamed eggplant…it probably tastes like air!

    What a fun linkup idea! I really like eggplant, but it has to be prepared just right. I really love the looks of this recipe, especially the ingredient list. Pinning it! I also just noticed your cauliflower recipe from yesterday…. I will be making that today. I’ve had a head of cauliflower in my fridge that really needs to be used. Thanks for the great recipe ideas!

    Honestly, you deserve a standing ovation in my mind for attempting a recipe with eggplant – it’s my least favourite veggie as well and I can’t even remember the last time I ate it. But a dip is a -perfect- avenue, especially when it’s healthy 😀

    That’s a fun idea! I was also dismayed when I read your first veggie pick as eggplant (not too fond of them, except for the Japanese ones). It is also one of my least favorites and I won’t eat on its own at all 🙂 however, I can imagine eating baba ghanoush. Aren’t dips versatile? I love tahini, it’s the base of everything else! I haven’t been to Israel, when did you go last time? I heard it’s a bit expensive now due to more tourists. Wow, what a massive difference, your low-fat and low-calorie baba ghanoush sounds good to try! My favorite eggplant dish is probably the breaded eggplant cutlets with vegan cheeze/tomato sauce (like a pizza snack) and wok-fried eggplants in saucy Chinese black bean sauce.

      I don’t think I’ve ever tried the Japanese ones! Must track them down in Toronto…along with kabocha squash which I can never ever seem to find!!!

      Those eggplant cutlets sound fantastic and I love me a good vegan cheese (my stomach thanks me!). Is the recipe on your blog or elsewhere? Would love to try it!

    I love eggplant! My favorite is probably eggplant parmesan. Not the most exotic, but super tasty!

    I’ve never tried baba ghanoush but mixing eggplant into a spread sounds like a wonderful idea. I too find them a bit blah and my family isn’t keen on the texture so whenever I purchase one I can’t seem to eat it all before it goes mushy. You always post great recipes. Yum!

    I have to agree with your- eggplant isn’t my favorite veggie because of the texture but I think it looks great like this! It looks just like hummus which I am insanely addicted to so I think I would love it!
