I’ve shared my struggles, my fears and some of my most vulnerable thoughts here on the blog, but I’m scared to post a cookie recipe?

Allow me to explain.

When I started The Healthy Maven four years ago (read more about THM’s four year journey HERE!), I could never have expected that I’d be in the position I’m in. I was creating recipes that I was making in my life and workout and wellness tips that made sense for me as a 23-year-old post-grad who was, quite frankly, completely lost. I never intended to grow a big audience, let alone turn this fun, side-hobby of mine into a job, but the universe had other plans and with a lot of hard work and grit, here I am.

But I’ve changed A LOT over the past four years, and I love that this place has chronicled it all. But when my thoughts and needs change, I can help but be hesitant in implementing these changes on the blog.Crispy on the outside, chewy on the inside, these gluten-free chocolate chip cookies will have everyone fooled whether they're gluten-free or not! You know I believe 100% in a whole foods philosophy. This, I’m quite certain will never change. But that doesn’t mean that everything around here has to be veggie bowls and energy balls. I also believe strongly in “soul food”. The kind of food that hits that warm place in your heart that no black bean brownie or chickpea blondie could ever reach. Not that I’m knocking these kinds of foods, you know I love them and I know you love them too, but sometimes girlfriend needs a real chocolate chip cookie if you know what I mean?

For years I kept trying to force my healthified cookies onto C, who while incredibly kind in his appreciation also would ask if I could “make him a real cookie, please?”. And for as many swaps and healthy substitutions I could make, nothing quite satisfies quite like a butter and sugar-filled cookie.

So I made a compromise. I swapped out the refined flour for whole grains and almond flour. I used coconut sugar in place of brown sugar and honestly guys, butter is butter and so grassfed butter it is! I have lots of coconut oil cookies on the blog, but BUTTER MAN.

Even my friends who care as passionately about health as I do, and they all agreed I needed to post the recipe.

These Decadent Gluten-Free Chocolate Cookies definitely would not have been on the blog four years ago, but I’m so happy they are now. They show how much I’ve grown. And I mean that in the mental sense. They show that I’ve made room for more foods and learned to love and embrace those “soul foods” that I spent far too many years avoiding.

One of the questions I ask on the podcast is “what advice do you have for your 20 year old self”? Well friends, mine would be to tell her to EAT THE DAMN COOKIE. Don’t eat five of them, but don’t be afraid of them either. There is room for everything, and especially for a chocolate chip cookie.

Decadent Gluten-Free Chocolate Chip Cookies

PREP TIME 10 mins
Cook Time 10 mins
Total Time 20 mins

Ingredients

  • 1/2 cup unsalted grassfed butter, softened
  • 1/2 cup coconut sugar (brown sugar works too)
  • 1/4 cup pure cane sugar (white sugar works too)
  • 1 tsp vanilla extract
  • 3/4 cup brown rice flour
  • 1/2 cup almond meal
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 1 large egg
  • 1/2 cup chopped dark chocolate

Instructions

  1. Preheat oven to 375 degrees F.
  2. Line a baking sheet with parchment or a silicone mat (or grease tray if neither are available).
  3. In a large bowl cream together butter, sugars and vanilla.
  4. Stir in the egg until well combined.
  5. In a separate bowl combine rice flour, almond meal, baking soda and sea salt.
  6. Add dry ingredients to wet until well combined.
  7. Stir in chocolate.
  8. Add dough to try, 1 tablespoon at a time. Don't add more than 12 cookies per tray or they will overcrowd.
  9. Bake for 10 mins (or slightly longer as all ovens are different).
  10. Let sit on tray for 10 mins before removing to cool completely on a wire rack.
  11. Use remaining dough and repeat 10 mins in oven and 10 mins on tray.
  12. Stir in an airtight container for up to 3 days (if they last that long...)

    I had a similar struggle around this time last year! My blog is a total reflection of my own kitchen and when Drew requests “real cookies” (he says the exact same thing, lol) he wants real-freaking cookies. So in the end I shared a sort of compromise as well, and Drew and my family love them 🙂

    Now I will have to put these cookies to the test on Drew 😀

    Isn’t it weird that we – as a generation or at least part of the blogging community – are scared of sharing the kind of recipes that our parents and grandparents would deem totally normal? So yes, I do understand but I’m happy you decided to share this. I did the same around Christmas in the past year. It was a classic German Christmas cookie I’d grown up with, just veganized. Sharing an over the top healthified version wouldn’t have been true to the cookies holding childhood memories for me. Life is short. Too short to not eat the real deal at times.
    Long story short these sound amazing. True soul food.

      Completely! What’s crazy is that I felt no shame in eating it in my private life, but was worried how it would go over publicly. Clearly I underestimated your guys’ support. You’re the best!

    Ooo crispy cookies are my fave! And haha I love your advice to “eat the damn cookie”. I think too often we get caught up in ideas about what we “should” and “shouldn’t” eat and just forget to live in the moment and savor the deliciousness of life. There’s a time and a place for healthified foods, but at the end of the day, I think just having the real deal is almost better because I could have like a million banana oat cookies and never feel satisfied, but two real cookies and feel content. Adding these to my weekend baking list!

    Oh Davida! This comes at the most perfect time. Yesterday, I made some doughnuts, but of course they were healthy ones with no refined sugar and gluten free, and my BF was not impressed, he said to me “can you just make normal doughnuts” and I have to agree. I love making healthier substitutions as well, but sometimes we just need to eat the damn cookie, or in my case doughnut. I should have learned from my past mistake of healthier cinnamon rolls over Christmas… haha. And these cookies!!! They look delicious and I’ll be trying them out soon 🙂

      I’VE DONE THE EXACT SAME THING ON CHRISTMAS!!! They were a dry crumbly mess and while Curt’s family tolerated them, we would have been better off just eating the real deal!

    I love this! I generally eat healthy, but there will always be something about Nestle tollhouse chocolate chip cookies that I made with my mom that bring me extra happiness. I usually make cookies a little healthier now, but my husband always asks for “normal cookies” lol

      yup! My bf is usually pretty happy with the healthified versions, but honestly, we could all use a “real” cookie every now and then!

    These look DIVINE. I may have to try them out with salted chocolate in too 😉

    So funny, my boyfriend says the exact same thing when I try and fob him off with sweet potato brownies! He has a point though, soul food is necessary at times and, really, life is all about balance. I’m glad you shared this post – in my opinion it’s so much better to be real rather than chasing some ideal.
