Double Chocolate Cherry Cookies

And so begins day 1 of the The Great Valentine’s Day Bake-Off! I figured I would start it off with chocolate and end with chocolate. Although the finale recipe is TBD. Any suggestions are welcome!

I’m pretty stoked about these cookies a) because I’ve had chocolate-cherry on my mind ever since that beautiful disaster and b) because it meant I could fill my cookie jar in my new home!

double chocolate cherry cookiesThis is not just any cookie jar. This cookie jar is made from blood, sweat and tears aka 3 hours of gruesome painting at Ceramic Cafe. C and I went there for Valentine’s Day last year set on proving we can spend V-Day doing something other than a Netflix marathon. Which for the record we are damn good at.

The product of this exciting excursion? Our gorgeous owl cookie jar named Louman.

Louman seems like an odd name for a cookie jar (that is if you’re past the fact that we named our cookie jar) but there really is a whole lot of meaning behind the name.

double chocolate cherry cookies 3When C and I were living in NYC we had a doorman from Columbia/Portugal/Croatia -we still have no clue- named Louman who used to share words of wisdom with us as we would walk in and out of our apartment. In particular I appreciated him telling C everyday to treat me like his princess. So when deciding what to name our (wise) owl, Louman just seemed like the perfect fit.

Unfortunately he’s been sitting in a box since last year so it was fun to be able to fill him for the first time. I have a feeling Louman (the real one) will randomly appear in my life with his squinty smile and reminder to live life to the fullest, but in the meantime I’ll keep filling his replacement with cookies 🙂

Double Chocolate Cherry Cookies

  • Prep Time: 15 mins
  • Cook Time: 12 mins
  • Total Time: 27 mins
  • Yield: 2 dozen 1x

Ingredients

  • 1 flax egg (1 T ground flaxseed mixed with 3 T warm water)
  • 3/4 cup almond meal
  • 3/4 cup tapioca flour
  • 1/2 cup cocoa powder
  • 2 T coconut palm sugar
  • 1/2 tsp xanthan gum
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp sea salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 1/2 tsp vanilla extract
  • 1/2 cup dried cherries
  • 1/2 cup dairy-free chocolate chips (I used Enjoy Life Brand)

Instructions

  1. Preheat oven to 350 degrees F.
  2. Make flax egg and set aside.
  3. Combine all dry ingredients in a large bowl.
  4. Combine applesauce, coconut oil, maple syrup and vanilla. Stir in flax egg.
  5. Add wet ingredients to dry and stir to combine.
  6. Add in dried cherries and chocolate chips.
  7. Scoop 1 tablespoon of batter onto a parchment or silicone lined baking sheet (12 scoops per sheet).
  8. Bake for 11-12 minutes.
  9. Let cool for 2 mins on baking sheet before removing and letting cool completely on a wire rack.
  10. Will keep up to 5 days on counter in an airtight container.

    I’m not a huge fan of cherrie (I know I know – what’s wrng w/ me right? Ha Ha), but I can always sub them w/ fresh cranberries… yes?

    I’d much rather still in – cook a nice meal together, play some card game and demand for a massage afterwards. Okay maybe not demand, but ask nicely of course 🙂

    I love the idea of going to a ceramic studio thing for a date! Eric and I usually go out for dinner for dates, once in a while a movie….ya. We’re kind of boring.

    My most prized possession is this scrappy little dog teddy that I got for $1 in NYC when I was about 3 years old. I have no idea what it is about him that I fell in love with, but he’s been my favourite since day 1, and I even sleep with him to this day 😆 I actually lost him in a hotel in LA when I was really young and my parents were ready to offer $2K for whoever found him because I was so distraught. Thankfully he just slipped behind the bed…

      Tina I actually got emotional the other day just thinking about it! I know that’s crazy but it’s been incredible to see something I started from scratch turn into more than I ever could have expected or hoped for. I’ve learned so much about myself through experimenting in the kitchen and through blogging. I would not trade it for the world! Happy almost blogiversary! Same day as my baby niece’s birthday too 🙂

    Chocolate and cherries are a winning combination in my book! My most prized possession is this box of cards I’ve been collecting since I was a kid. It has all of these letters and cards from friends over the years, and they are all really touching. I’d say the only other thing that means as much to me is all of my pictures from my times abroad. I have thousands of pictures from the 3 times I studied abroad and the ones from Greece mean a lot to me because I got to see some really unique places that are far off the tourist trail.     I love Louman! He’s beautiful. Owls are the best. I have an owl sweater, owl earrings, owl statues….ok, I’m starting to sound like a crazy owl lady so I’ll stop.

    I like a healthy mix of active and very inactive date nights. THe BF and I have been pretty busy lately so we’re planning on having a low key V-day. Cooking a romantic dinner at home together and then watching the Netflix release of House of Cards. We’re very good at Netflix releases too 🙂

    My ideal date these days involves sweats and not leaving the house – that wasn’t always the case and when it is warmer (and not snowy) that will change – then it will involve sunshine and the boat!!!

    I love the story of Louman the owl and how he got his name. I think that is too funny and too cute and C should absolutely treat you like a princess, such great advice.

    I love the choc-cherry flavour combo of these cookies, I always think chocolate and cherries goes well together.

    I love your Louman story! That’s so adorable, I love wise strangers/acquaintances. I’m also jealous you can keep your cookie jar full. John and I eat all of every sweet that enters our home the moment it enters our home… no matter how much there is.

    My ideal date is obviously activity, something super spontaneous and kind of unplanned (at least by me). HA not like I’ve went on one of those in a while (which I’m not even mad about, I went on enough dates from age 14-24 that this break has been good).

    I was literally thinking about cherries & chocolate last night… my dad and I went to see Monuments Men then I thought about the Black Forest and thought about Black Forest Cake and obviously it was a long run day and I was hungry. I need to buy dried cherries/frozen cherries to have on hand for emergencies like craving a black forest cake smoothie (that hasn’t been invented by me yet).

    1. That owl is adorable 2. The fact that it comes with a name and a super sweet story makes it even more so 3. Chocolate and Cherries in cookies… I’m in love 🙂 We usually do date night on the couch with a movie and a giant bowl of popcorn, though its fun to get out once in a while!
