Spring has sprung here in Northern California! Everyday I’m so grateful for the sun, the new blooms and even the rain. Not so much the seasonal allergies but hey – I still love this time of year! This year, the baking itch has hit me harder than usual. Maybe it’s the fact that we’re all spending more time at home or maybe it’s the fact that baking brings me comfort. I love creating in the kitchen and the treats that come out of it don’t hurt either…So buckle up and let the spring baking begin!

13 Healthy Spring Baking Recipes

1. Oatmeal Carrot Cake {Gluten-free}

this one is dedicated to C whose favorite dessert is carrot cake! This cake recipe has a fun twist using oat flour but trust me on this – it’s delicious!

2. Lemon Poppyseed Pancakes

Another delicious breakfast option to spruce up your mornings at home!

3. Blueberry Coconut Baked Oatmeal

If you haven’t made baked oatmeal before, you need to start now! You can prep it in advance and have healthy breakfasts all week long.

Ooo I love a good zucchini baked good! The fresh zucchini adds an incredible moisture to any treat but is also sly enough to trick any veggie haters.

It was love at first sight with these carrot muffins from Pinch of Yum! Cannot wait to whip up a batch of these to have with my morning coffee!

I’m in love with the bright green coloring of this tart! Believe it or not, it’s vegan and gluten-free. Bravo, Eating Bird Food! The perfect and refreshing way to use up the rest of those winter citrus!

Ambitious Kitchen calls this a bread but doesn’t it look like the fanciest loaf of bread you’ve ever seen?! I’d take this bread for my birthday cake.

12. Carrot Cake Waffles

Yes, I’m counting waffles as baking. It doesn’t get much more springy than this! I love making these on weekends for a festive at-home brunch.
