Well this soup is a life-saver because you literally dump the contents of the jar into a pot, add 7 cups of water and you have a complete meal! It is THAT easy. I love making these soup in a jar as gifts for family and friends – I can assure you that they will be so grateful to have a quick and easy meal in the cupboard!

Soup has always played that life-saving role for me. Whether it be from a jar, the freezer or straight from the pot, when I’m hangry and lazy it’s soup that I turn to.

Without a doubt, this habit is something I inherited from my Mom. As I get older I’ve discovered how few people grew up on soup. When I say that there was soup at almost every meal we ate, I’m not kidding. I think my Mom knew that one of the best ways to get us to eat our veggies was in soup and damn can that lady make a good soup!

Traditionally, she’d make a huge pot (seriously the woman has the biggest pot on the planet!) of soup and freeze it into individual-sized servings, but I think I may be onto something with the soup in a jar trend. Even though you literally only add water, it kind of feels like you’re making the soup from scratch and so you not only get fresh soup, but productivity points too.

Ingredients in Moroccan Lentil Soup (in a jar!)

  • red lentils
  • dried onion flakes
  • spices: garlic powder, cinnamon, coriander, turmeric, cumin, parsley, bay leaves, sea salt and pepper

It doesn’t get much easier than that. If you’re like me and keep every spice under the sun in your pantry, you might be able to whip up this  meal without a trip to the grocery store!

What to Serve with Moroccan Lentil Soup

Because of the protein packed lentils in this soup, it’s super filling on it’s own but I love pairing it with some sides to really round out the meal. You can’t go wrong with a hearty loaf of bread – I love this sweet potato cornbread! Roasted vegetables like these brussels sprouts would be a great accompaniment and you also can’t go wrong with a side salad. This harvest farro salad is delicious as is this fennel pear and ricotta kale salad. You really can’t go wrong with this soup. Enjoy!

Ingredients

Scale
  • 2 16 oz mason jars (ingredients fill 2)
  • 3 1/2 cups red lentils
  • 1/2 cup dried onion flakes
  • 1 tsp garlic powder
  • 1 tsp cinnamon
  • 2 tsp coriander
  • 2 tsp turmeric
  • 1 tsp cumin
  • 2 tsp dried parsley
  • 1 tsp ground pepper
  • 2 tsp sea salt
  • 2 bay leaves

Instructions

For the Jars:

  1. Combine all spices (except onion flakes and bay leaf) in a bowl.
  2. Add 1 cup of lentils to each jar.
  3. Top each jar with half of dried onion flakes and half of spice mixture.
  4. Top each with 3/4 cup of more lentils.
  5. Place a bay leaf on the top and seal with top.

Instructions for cooking soup:

  1. Add contents of one jar to a large pot and top with 7 CUPS of water.
  2. Bring mixture to a boil then let simmer with the top on for 20 mins.
  3. Remove lid and simmer for 20 more minutes.
  4. Feel free to add chopped kale, chard or other greens in last 5 minutes of cooking for a veggie boost.

  1. I made this as a gift & it was delicious. I did add some cayenne pepper to add some spice to the soup. This recipe will be on repeat for my family!






  2. This looks great for a teacher gift! Quick question. It says red lentils and the jars look like red lentils, but the cooked picture at the bottom looks like yellow lentils? Is that a different soup? Wondering what the soup actually looks like after cooked. Thanks!

    1. Once mixed with the spices and cooked it looks a little more yellow – but yes those are red lentils! Yellow lentils can easily be substituted if desired.
