Does anyone else find themselves confusing “eat your vegetables” with “eat your greens”? Sometimes I’ll look down at my plate and feel badly that there isn’t a green vegetable on there. Suddenly, I think I’ve cheated myself in my daily quote of vegetables.

I have a feeling I’m not alone in this way of thinking… there is absolutely no doubt that green vegetables are amazing for you but why do we so quickly forget that there are so many other incredibly nutritious veggies that aren’t super vibrant in color?! Case in point: mushrooms.

Mushroom Nutrition

Mushrooms are one of the rare vegetable sources of vitamin D and can actually be a substantial source of iron. They also contain selenium, an essential trace mineral important for cognitive function and various immune-boosting antioxidants. Basically, brown is the new green. So next time you feel like you’re lacking a little green, remember to eat the rest of the rainbow. It certainly can’t hurt!

Mushroom Wild Rice Soup Ingredients

  • Vegetables – yellow onion, celery stalks, mixed mushrooms
  • Wild rice – I used Lundberg’s Wild Blend.
  • Vegetable broth or stock – I like making my own!
  • Olive oil
  • Red wine vinegar
  • Seasonings and spices – dried thyme, sea salt and pepper.

How to Make Wild Rice Soup

STEP 1: Sauté onions in a large pot with olive oil over medium-high heat. Cook until fragrant and translucent.

STEP 2: Add the celery and cook for an additional minute before adding the mixture mix. Add the mushrooms and cook for about 10 minutes or until they have reduced in size and appear to be “sweating”.

STEP 3: Add the vegetable broth, wild rice, thyme, sea salt and pepper and bring the mixture to a boil. Lower the heat to a simmer, cover and cook for 30 minutes or until the rice is fully cooked.

STEP 4: Remove top, add the vinegar and simmer for another 10 minutes before serving warm.

  1. Add olive oil to a large pot on medium-high heat.

  4. Let mushrooms cook for about 10 mins or until they’ve reduced in size. They will appear as if they are “sweating”.
  5. Add vegetable broth, wild rice, thyme, sea salt and pepper and bring to a boil.
  6. Lower heat to a simmer and cover. Let simmer for 30 minutes or until rice is fully cooked (time will depend on the type of wild rice you use so you may need a bit longer than this.
  7. Remove top, add vinegar and simmer for another 10 minutes
  8. Serve warm.

  1. I love this soup! I doubled it but wished I didn’t double the rice, its pretty thick. Either way soup or stew is fantastic. I made a quick stock out of the mushroom stems and scraps as I was cutting everything up. I used 2 carrots too, the flavor was amazing. I just love mushroom soup.

  2. Really enjoyed this recipe! I skipped the celery because I didn’t have any on hand, and added juice from 1 lemon and an extra teaspoon of salt to account for low sodium broth. Turned out great!






  3. I haven’t made this soup in awhile, but was at Whole Foods where they have a variety of mushrooms so I had to apply my google skills to find the recipe again. I kept skipping over it for some reason. So glad and I found it because it is soooooo goood!






  4. I just made this tonight, and OH MY GOSH it was fantastic!!! I definitely love mushrooms more than the average person, but my husband and 2 year old really liked it, too! The flavor was awesome, and I already can’t wait to make it again! I tried to give it 5 stars, but it wouldn’t let me do anything past 3, and the soup definitely deserves all 5 so I just left it blank! Thank you so much for such a wonderful recipe, I can’t wait to try some of your others!

  6. I have never tried mushroom or anything made out of mushroom. This looks good and delicious too but then again I doubt how mushroom will taste when you eat them first time. Pictures are mesmiring and asking me to give it a try.

    Off topic- Do you have advertisements on images of your blog ? or it is something my browser ( a bad extension) is causing ?

      1. I will definitely give mushrooms as try and as far as advertisements are conerned. They are not intrusive or bothering. I was just curious to know if these are something that the website owner ( you) have added or work of some malicious scripts. Dealing with dirty stuff ( malware, bad advertisements, adware etc. ) can be very difficult.

          1. I found them good and interesting. I have seen such photo advertisements after a long long time and that’s why I got curious and asked you about it. They are not covering the whole picture and appear only at the bottom of images as a small rectangular banner which is great. I’ll suggest to continue using them for additiional revenue ( not at all bad) and if you are still unsure whether to continue with it or not then you can always ask your reades via a short poll and let them decide.

            Just my thought.
