Peach and Coconut Oatmeal Cookies

C was home from work yesterday so you have him to thank for cookies appearing on the blog today. Poor kid destroyed his legs jet skiing and playing volleyball over the weekend to a point where he could barely walk to the kitchen, let alone make it to work. So when I asked him if there was anything I could do, his only response was “cookies”. Actually his only response was “Louman has been pretty empty…” but unless you’re a longtime THM reader you probably wouldn’t get this reference.

Pro: when at a loss for recipe inspiration, he is sure to encourage me to get my bake on. Con: He takes over my office aka the bed. Pro: I get to listen to the Game of Thrones audiobooks over the speakers with him. Con: He defaces my to-do list by adding “have a ridiculously good-looking boyfriend” to it then checks it off…okay that one made me laugh a little 😉

The best part about having him home is getting immediate feedback from the ultimate test-taster. He declared these Peach and Coconut Oatmeal Cookies to be “seriously awesome”! I’ll take it!

Ingredients in Peach and Coconut Oatmeal Cookies

  • rolled oats
  • oat flour
  • baking soda
  • salt
  • coconut oil
  • applesauce
  • coconut palm sugar
  • eggs
  • vanilla
  • coconut flakes
  • peaches

How to Make Peach Oatmeal Cookies

Using a stand mixer or electric handheld mixer, start by mixing the coconut oil, applesauce and coconut palm sugar. Mix in the eggs and vanilla extract until well combined. In a separate bowl, combine the dry ingredients – the oats, oat flour, baking soda and salt. Slowly add the dry mixture to the wet mixture. Lastly, add in the coconut flakes and chopped peaches until mixed in. Scoop out tablespoon sized balls and place on a baking sheet lined with parchment paper. Bake for 12-15 minutes at 350º, let stand for 5 minutes and then enjoy!

Peach and Coconut Oatmeal Cookies

Delicious and healthy oatmeal cookies packed full of flavour with fresh peaches and unsweetened coconut. Perfect for peach season!

Ingredients

Scale
  • 1 1/2 cups rolled oats (GF if necessary)
  • 1 cup ground oat flour*
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup coconut oil
  • 1/4 cup unsweetened applesauce
  • 1/2 cup coconut palm sugar**
  • 2 eggs, room temperature
  • 1/2 tsp vanilla extract
  • 1/2 cup unsweetened coconut flakes
  • 2 large, ripe peaches (chopped into small pieces)

Instructions

  1. Preheat oven to 350 degrees F.
  2. Using a stand-mixer or electric mixer on medium speed, cream together coconut oil, applesauce and coconut palm sugar until smooth.
  3. Add in eggs and vanilla extract until well combined.
  4. In a separate bowl combine rolled oats, oat flour, baking soda and salt.
  5. Turn mixer down to low-speed and slowly add rolled oat mixture to wet batter until completely combined.
  6. Add in coconut and chopped peaches until just mixed in.
  7. Line a baking sheet with parchment or a silicone mat.
  8. Scoop out tablespoon sized balls and place 12 on sheet. Flatter each ball with palm.
  9. Bake for 12-15 minutes or until level of crispiness reached.
  10. Remove from oven and let stand on sheet for 5 mins before removing and allowing to cool completely on a wire rack.
  11. Repeat until all dough has been used.
  12. Keep in an airtight container for up to 5 days.

*To make oat flour, add rolled oats to a blender or food processor and blend until flour consistency reached. OR use regular all purpose flour.
**OR use brown sugar.

    Haha! You crack me up girl! I am obsessed with peaches but they have NOT been good lately. WTH!? I never would have thought to put peach and coconut together but I’m sure it is awesome.

    I wish I could wear yoga pants every day to work. I totally would. Right now I’m rocking dresses because they are the only thing that fits!

    Poor C! He’s so lucky to have such a fab gf to bake him alllll the peachy keen cookies. Then you went and added coconut….dreamy on another level! Is C willing to share?!

    Whenever I think of peaches, I think of Peaches and Cream Oatmeal from Quaker Oats and then I think of myself at the age of 5, 6 & 7 – Man I miss those years, when the worst thing that could possibly happen was have my barbie doll get throw in the deep end of the pool!

    So obsessed with peach season!! And I want to make cobbler so so so badly. All I need is more peaches and vanilla ice cream and then we’re ready to rumble.
    I wear yoga pants and a t-shirt to “work” (aka chores and errands and mom kinda stuff).

    These look amazing and I love the fruity flavors! I usually think of cookies being primarily chocolate/peanut butter, but I love how these branch out from those!

    I want to hang out at your house and eat stuff like this all day! 🙂 I’ve had a crazy obsession with peaches this summer so these look amazing. plus im trying the primal diet for 30 days so essentially i want one of these right now more than i can convey in words 🙂

    I wear jeans to my day job and sometimes – like to day – I dress up. But people give me weird looks because I’m not usually that put together, so I don’t do that often haha
    When I’m blogging, I’m in my pj’s on the bed or in the kitchen. I get strange looks then too…
    Also, I’m pretty sure I’ve never had a fresh peach before. I bought one a couple weeks ago, and forgot about it- was not pretty. I shall try again, because…COOKIES!

    since i work at a hospital and also do some management stuff, i switch in between scrubs and business casual. PJ would be a nice change every once in a while though. peaches and oatmeal together in the form of cookies sounds pretty darn good. lucky C.

    These cookies look fabulous! My dad has a few peach trees and hopefully, I’ll be getting some peaches this weekend, so making these cookies would be a perfect way to use some of them up. Delicious!
