From blueberry muffins to banana muffins and my all-time favorite, zucchini muffins(!!!) I’ve shared numerous healthy muffin recipes over the past decade that I’ve been sharing recipes on the web.
Muffins are my go-to easy snack or quick breakfast when I don’t have time to prep anything. They taste delicious, can be made in large batches and even my kid loves them! There is almost always at least 3 varieties of healthy muffin recipes in our freezer at all times.
So if you’re looking to make a healthier swap without sacrificing on taste and texture, I’m sharing my go-to healthy muffin recipe and 15 different recipes so you’ll be sure to find something you love.
Easy Healthy Muffin Recipe
My go-to for a healthy muffin recipe is my classic oat flour muffins! They make the perfect muffin batter base that can easily be customized to your liking. Here’s the ingredients you need:
- Oat flour – you can use store-bought or grind up your own in a high speed blender (use old-fashioned oats or quick-cooking oats NOT steel cut oats). Note: you can easily substitute in whole wheat flour if you aren’t gluten-free or don’t have any oat flour.
- Coconut palm sugar – or brown sugar or other granulated sugar
- Baking soda + baking powder – helps the muffins rise.
- Cinnamon – the perfect spice pairing for these muffins.
- Applesauce – you can replace with canned pumpkin or mashed banana.
- Almond milk – feel free to sub in any other kind of milk.
- Coconut oil – this adds moistness.
- Large egg – helps bind the muffin together. Note: I would not recommend using a flax egg for this recipe.
- Vanilla extract – a flavor enhancer.
- Optional add-ins– chocolate chips, blueberries, raisins etc…

How to Store + Meal Prep Muffins
One of the best parts about muffins is that they can easily be meal-prepped and stored so you’re not scrambling for your muffin tin. I’m sharing with you how to store and meal prep your healthy muffins so you have them available at your fingertips!
First things first, make sure you cool your muffins to room temperature before storing. If you try to store warm muffins, condensation will build and they will go bad a lot quicker.
For regular storage simply place in an airtight container for up to 3 days. Your muffins will last up to 7 days if you store your container in the refrigerator.
To Freeze
Individually wrap each muffin (I use tinfoil) and place in a freezer-safe container or bag. Store in freezer for up to 3 months. You can either thaw your individual muffins on the counter for several hours or for quick eating you can heat them in the microwave for 30-45 seconds.

Ingredients
- 2 cups oat flour (ground up rolled oats)
- 1/2 cup coconut palm sugar (or brown sugar)
- 1 tsp baking soda
- 1 tsp baking powder
- pinch of salt
- 1 tsp cinnamon
- 1/2 cup applesauce (or mashed pumpkin or 1 large banana, mashed)
- 1/2 cup unsweetened almond milk (or other non-dairy milk)
- 1/4 cup coconut oil, melted
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup add-ins: chocolate chips, blueberries, raisins etc…
Instructions
- Preheat oven to 350 degrees F.
- Line a muffin tray with liners or spray with non-stick spray. You will only need 10 liners.
- Combine oat flour, coconut palm sugar, baking powder, baking soda, cinnamon and salt.
- In a separate bowl combine mashed applesauce, almond milk, coconut oil, egg and vanilla.
- Add dry mixture to wet and stir until just combined.
- Fold in add-ins of choice.
- Scoop batter evenly into 10 cups.
- Bake for 20-25 mins.
- Remove from oven and let cool for 10 mins.
- Remove from tray and let cool completely on a wire rack.
- Will keep for up to 5 days in an airtight container or in freezer for months. See storage instructions above.
